Best Burger Sauce

Pretty good, and saves me the trouble of pulling several bottles out for one hamberger. I halved the mustard, simply because I don't like mustard very much, and added a dab of cream-style horseradish, because I do like horseradish.

Peach Cobbler I

The bread topping came out nice and crunchy, but my peaches needed a spoonful or two of the sugar and a little flour. Plan on eating this within a day or two as it doesn't keep.

Pumpkin Soup

Excellent soup, and a good way to use up home-cooked pumpkin that came out, well, soupy. I added half each of red bell and poblano peppers simply because I had them, but the soup would have been fine without them.

Ghirardelli® Triple Chocolate Truffle Cake

First, five stars for the original recipe. However, I was making this for a family party, and needed a sweeter version for those who dislike dark chocolate. After experimenting, I found that a half recipe fits nicely in a 2" deep, 6" diameter cake pan. Milk chocolate can be substituted for at least two-thirds of the chips used in the cake. Milk chocolate can also be substituted for the icing if you cut the cream in half (makes sense since milk chocolate already contains some milk). Whatever you do, Do Not Substitute White Chocolate! That came out so thin and sour that I thought the cream was bad. If you want a white topping, mix confectioners sugar with a little cream and vanilla extract.

Sloppy Joes II

A bit mild for my tastes, but very good for children. I also tried it with leftover roast pork for a version of pork barbeque sandwiches. I sauted the onions and pepper, added the other ingrediants and shredded pork, and simmered for 30 minutes.

Real Strawberry Cupcakes

The cake comes out a little dense, like muffins or zucchini bread, so be sure to put the amount specified in the cups. I skimped a bit, and some of my cupcakes didn't reach the tops of their liners. For the frosting, I used 1/2 cup cream cheese, the butter and vanilla, another cup or so of confectioners sugar, and some mashed strawberries. A very good use for fresh strawberries, and I might try this with frozen strawberries this winter.

Pumpkin Turkey Chili

I used red and yellow bell peppers, and a can of Rotel chiles and tomatoes, as well as the can of regular diced tomatoes. However, I was using pumpkin puree from a sugar pumpkin and it yielded more than 2 cups. Tasted better the next day after the flavors had a chance to blend.

Strawberry Pie II

I adapted this recipe for blueberries, putting 2 cups of the berries, 3/4 cup of sugar (my berries were a bit tart), 1/2 cup of water, and a squirt of lemon juice in a blender. The berry puree was then put in a large saucepan, and I pretty much followed the rest of the recipe, except that the cornstarch was mixed in the remaining 1/4 cup of water before adding to the boiling puree.

Buttermilk Dill Bread

I was using up a bunch of fresh dill, and used about 4 to 5 teaspoons. Also, I made 12 rolls, which were baked at 350 degrees for 25 minutes.

Mango Salsa Chicken

Like some others, I cut down on the cilantro, as a whole bunch seemed like an awful lot. I like cilantro, but not that much! I used about 1/2 cup of chopped leaves. Also, I switched the color of the peppers, using a red bell and a green jalapeno, but that probably didn't make as much difference. Leftover chicken wasn't as crispy the next day, of course, but it made a decent sandwich with the salsa.

Bubba's Jambalaya

I made this for Super Bowl Sunday. I skipped the bacon, but had plenty of ham to make up for it, and I used cooked turkey frozen from Christmas instead of chicken. Hot pepper lovers will want to serve it with a bottle of Tabasco on the table, but the heat was just fine for me.

Irish Cream Bundt Cake

Very rich. I used extra Irish Cream in the glaze so that I could empty the bottle. Based on other reviews, I put the cake back into the pan and poured 2/3 of the hot glaze on it and let sit about 10 or 15 minutes. Then I flipped it onto a plate and carefully topped with the rest of the glaze.

Came out a little wetter than I liked. I'll use half a cup of milk to cook the leeks (or onions) next time, and add more milk only if the mixture needs it. With all of the milk, this would be an excellent base for a cassarole with sausages on top.
