Pretzel Buns

This just didn't turn out well at all!!!! I read the others' comments and thought I'd give it a try. The batter was definitely "pourable"...so much so that I couldn't shape into balls at all. I ended up scooping up a spoonful of "dough", dipping it in the baking soda mixture and dumping into a cupcake pan. They didn't even taste like a yeast bread - my husband thought they tasted like biscuits. Way too much effort for such a sub-par result.

Light Wheat Rolls

These were the best rolls I've ever made. Everyone in my large family were amazed at how great they were. I added 1 tbsp of vital wheat gluten with the wheat flour and 1 tsp sugar with the yeast, as suggested by another reviewer. I used by bread hook to knead the dough - 7 minutes on #4 speed. I did have to add about an extra cup of flour for the dough to stiffen. I made the the day before Thanksgiving, and they were still fresh and delicious three days later!

Sweet Potato Apple Scallop

Delicious! This may be my new go-to Thanksgiving sweet potato recipe. I used extra sweet potatoes (to fill the dish). I didn't have any orange extract, so I drizzled orange liquor over the apples when I added the butter.

Energy Bars

These are pretty good! Instead of sunflower seeds I used pepitas and 1/4 cup each oat bran and ground flaxseed for the wheat germ. I agree with the other reviewer that these had a cake-like texture - not bad, just different. I think they needed some salt. I'll add 1/2 tsp. next time.

Chicken with Blueberry Sauce

This was delicious, quick and easy!!! The perfect combination. I followed the recipe as directed, using the white wine vinegar. At first I thought it was going to be too much, but it turned out perfectly. I may try this will cherries and berry preserves over pork chops next.

Lime Chicken Soft Tacos

This was tasty. I had some fresh corn, so I sauteed it and added it. I also used shredded, cooked chicken and heated everything through in the skillet. I used cilantro instead of oregano and one whole lime. Served on corn tortillas with avocado.

This is a very easy and very delicious salad. Feel free to adjust vegetables to what you have on hand; this is a very flexible recipe. Also, instead of using cherry tomatoes, I used a drained can of diced tomatoes.

Sweet and Savory Slow Cooker Pulled Pork

This is the best slow cooker pork recipe I've ever prepared. The only things I changed is that I used diet root beer and I didn't brown the roast before putting it in the slow cooker. It made the house smell wonderful - we could barely wait for dinner!

Baked Coconut Shrimp

This was delicious! I love coconut shrimp but hate the fact that they are deep fried. This has all the flavor without the fat. The cayenne pepper is key - it gives it the perfect, unexpected kick. I didn't flip them during the baking process, and they still turned out perfectly.

Baked Egg Rolls

I didn't have time to make the suggested filling, so I just sauteed a bag of Asian slaw mix with some sesame oil, salt and pepper and made the egg rolls. I baked for 12 minutes, and I didn't need to turn them at all. My 7 year old, who is an egg roll fanatic, LOVED them. This is a great way to make egg rolls without all the fat of deep frying.

Mexican Bean Salad

This may be the best salad I've ever eaten! I followed the recipe with the following changes: used canned corn instead of frozen, 1 tbsp. Splenda instead of 2tbsp sugar, added extra cilantro, and added a can of drained, diced, fire-roasted tomatoes with garlic. I made the recommended amount of dressing - I think you need all of it for the dish. This will definitely become a family favorite!

Addictive Sweet Potato Burritos

This is great! I followed the recipe except did not add the water to the beans and added some shredded chicken to the burritos. The entire family raved about them, even the resident 6 year old who hates everything except pizza.

Stuffed Peppers

Very good! I had a bunch of green peppers from my garden, and this was perfect! I sauteed some chopped onions, garlic and jalapeno before cooking the ground beef. I mixed that together with some fresh chopped basil, oregano and parsley, before adding some of the tomato sauce. My husband kept coming back for more.
