Korean Saewoo Bokkeumbap (Shrimp Fried Rice)

Next time I will take a photo - this was possibly the best fried rice I have ever made. I usually make Chinese style, which is good, but these flavors and the fried eggs put this over the top! Everyone (including my 7yo DD) cleaned their plate. Ten stars as is. I did change the method from the recipe, but not any ingredients. I dislike pan washing (who doesn't?) so I used a large cast iron pan and just scooted everything to the outside to scramble the eggs in the same pan. They cook in less than a minute and you just stir up together. I also used precooked shrimp so I added the onion and garlic after the first five minutes, then added the thawed shrimp and corn for another two. The combination is ideal and I recommend against changing it, especially the fried eggs. Kudos, mykoreaneats!

Chicken Asparagus Roll-Ups

Wonderful flavor, and one of the simplest stuffed meat recipes I have made. I did paint the inside with sauce prior to stuffing, otherwise cooked as written. If you are worried about the lemon, use about half the amount then taste as you add. If you like the flavor by itself (it should taste a bit strong but not overwhelming), then you will like the result. Also, your dried herbs MUST be fresh! If your tarragon is several years old, then it will taste like green dust.

My Favorite Beet Salad

I would eat this every single week if I could! The combination of flavors is incredible. I highly recommend using the large platter as the recipe calls for, because the presentation is part of the fun plus you don't get too much of any one thing that way. I used Queso Fresco instead of Feta for its milder, slightly nutty flavor, and baby roasted organic beets from the market. They don't need to be warm.

Sarah's Rice Pilaf

This is a great pilaf recipe, because pilaf is supposed to be simple with subtle flavors. Perfect when something else on the plate is very bold. We served this with Blackened Fish from this site, and the combination is great. I do think I will add chopped walnuts next time though.

Blackened Fish

This is a fantastic blackened fish recipe! DH raved about it several times throughout the meal. I did use my large cast iron skillet on the outdoor gas grill, and I'm glad I did. The spices burned my eyes while putting thr fillets in the pan and while turning, even outside. I used Barramundi fillets as they were the closest my store had to trout the day I cooked. Wonderful! (For you folks with kiddos that can't take the heat - sprinkle salt and dill in place of the seasoning mix then cook first. My picky 7 year old ate half a large fillet)

Chocolate Chocolate Chip Cookies I

Absolutely wonderful, and a great recipe to do with kids because it's not fussy. We had a bunch of leftover chips from Christmas, so we actually made Chocolate Butterscotch / Peanut Butter / White & Regular Chocolate Chip cookies!

Meatball Soup

Wonderful soup. Used extra beef base and a can of tomato soup (because it's what I had), but I doubt these changes made much difference. Highly recommend this soup!

Greek Chicken Pasta

Yummy! I do feel that the pasta to other ingredients ratio is off, though. Next time I am using half the pasta,leaving all else as is,and it will be perfect for the three of us.

Lemon Piccata Whitefish

If you REALLY LOVE LEMON, this is for you. I do and would have given five stars, but for everyone else it was too lemony. They did eat it, but my husband requested that I change the amount next time. So, four stars in the overall household-pleasing category. I used barramundi so I believe this recipe would be wonderful with any firm white fish. (Barramundi is an excellent choice because it holds together well when turning.) One other thing I would recommend - only use a wine you would drink. A huge part of the flavor is derived from the wine you use.

Broccoli Crawfish Cheese Soup

Absolutely delicious! I would only make one suggestion, and it has to do with reviews rather than recipe: many folks are making with cooked shrimp instead (I added some for a combo - WOW). The cooked shrimp got a bit overdone in the soup, so I suggest making sure it is close to room temperature, then just add it with the cheese to quickly heat through.

I left out 1 tsp of the curry because I only had hot madras type on hand, otherwise followed exactly. This soup is wonderful! Used a stick blender, which I highly recommend.

Balsamic Pea Salad

I admit to using sunflower seeds (roasted/salted) and less mayo, but I don't believe these changes made a big difference. This is a fantastic recipe! Frozen peas are so nice and crisp, as opposed to nasty old canned.

Colored Sugar

I used zip-top bags, and much more than 2 drops food coloring. Did not bother to measure, and it turned out perfect. I let it dry on wax paper, but I don't know if it was strictly necessary to do so. The colors are perfect - easiest recipe I have every made!

Grilled Sweet Potatoes

I did one large packet with cayenne, and a smaller packet with cinnamon for my 3yo. Both were delicious. I left them on for 30 minutes, but I think 20 would have been better. They were a little too soft, and the butter burned on the bottom.
