Doggie Biscuits I

My friends enjoyed these, but I thought they'd be a little chewier. I'm going to try them again because it might be my oven. Cooking them a little less time might do the trick.

Tex-Mex Pork

I made this with one change: I swapped the tomato sauce for chipotles in adobo sauce. The chipotles are whole and have to be chopped, which I do in my mini chopper/food processor. This change made the pork spicier and smokier. It was awesome!!!

Spicy Pretzels

If you like spicy, I highly recommend this recipe. These pretzels are tasty and have a nice kick at the end. I made them for our school secretary's goodie platter on Secretary's Day and word got around. I had to take her more later because everyone else kept eating them. Now I've been asked to make them again just a week later! I followed the recipe to a T but wonder what would happen if I added a bit of brown sugar. Would they be salty/sweet or just a gooey mess? I'll try it and let you know!

Jalapeno Popper Spread

Everytime I make this I am asked for the recipe. I added real bacon pieces and a clove of minced garlic. People want to lick the bowl!! I don't even use the canned green chiles or canned pickled japs. I used three fresh jalapenos chopped with seeds, more if I want it spicier.

Pork Chile Rojo (Pulled Pork with Red Chile Sauce)

I've made this twice now and have enjoyed it both times. I used chipotle peppers in adobo sauce (after running the peppers through the mini food processor). They really added the extra kick I was looking for. The pork was great on corn tortillas and then I made enchiladas with mole sauce out of the rest.

Baked Potato Soup

I wound up cooking this longer than the recipe called for, but it only made it taste even better. I used a jar of Hormel real bacon bits that I had in the pantry and they did the trick. The only thing I would do differently next time is have green onions on hand for the garnish. After all, a baked potato isn't a baked potato without green onions!

Classic Spanish Sangria

I've been making this sangria for a couple of years now . . . everyone always loves it and asks for the recipe. The only thing I changed after the first time was the quantity of rum. I only use one cup per batch instead of 1-1/2; it's plenty!

Cucumber and Avocado Sushi

The only reason I'm only giving it four stars is because this is labor intensive. But the taste was EXCELLENT! It was also just a fun experience to spend the time in the kitchen with a friend making something so new and different. We felt like we were on an adventure. Maybe I SHOULD give it five stars!

Lemon Square Bars

These are total heaven. The crust is great and the lemon is not too tangy. They are very easy to make, as they don't require anything I don't always have around. I get requests for them all the time. EXCELLENT!

Slow-Cooker Chicken Tortilla Soup

I didn't know one could copy a recipe from a cookbook onto this website or I would have done it years ago. This recipe is straight out (verbatim) of my crock-pot cookbook and I've been making it for years. My husband likes it so much that I usually double the recipe so that we can freeze some and eat off it forever. I get requests for this soup often; it always gets eaten right up and gets rave reviews every time. My favorite ingredient is actually the enchilada sauce, as it makes the soup just spicy enough for everyone's taste.

California Chicken Spaghetti

I was looking for a pasta dish to serve my book club and decided this one sounded interesting. It was just different enough from other things we'd tried to warrant a shot. While it was simple enough to prepare, in the end I found it a little salty. My guests all loved it though, so I've decided that it was just me (I don't tend to salt my food, so I'm probably a little sensitive). Overall, good enough to try again for my husband, since he missed out. Thanks!

Memphis Rub

I visited Memphis for the first time this summer and had ribs at the same restaurant three nights in a row, they were so good. Since the trip I've tried a few times to replicate them, but have been unsuccessful until this recipe. It's perfect! I followed it exactly and my husband (who missed out on the Memphis trip) cannot stop talking about them. Very authentic. Thanks!

Cheesy Ranch New Red Potatoes

YUMMY! The only change I made was following the suggestion to boil the potatoes for a little while. If not, they'll take longer to cook. That aside, I give this five stars for it's simplicity and tastiness! I make it so often my husband started rolling his eyes at me, but our guests ALWAYS love it!!!

Chocolate Eclair Dessert

This gets five stars for it's simplicity and for the number of compliments it gets me every time. It tastes just like an eclair, although it works better if you can make it the night before. If it's not refrigerated long enough before you serve it, the graham crackers might still be a little crunchy. And we all know that eclairs are not crunchy. I always get requests for this recipe. VERY YUMMY!

Taco Lasagna

While this was tasty, I felt like I might as well have just made enchiladas. My favorite thing about it was that it reheats well. I love taking leftovers to work for lunch and was able to do that easily.
