Tuna Pita Melts

Spicy Swordfish

This was very tasty. We reduced the fresh ginger somewhat (1/2 a cup of fresh ginger requires a lot of ginger root!), and substituted tilapia for the swordfish (we just couldn't justify the $17/lb for a curry) and it was still very good.

Kettle Corn

This is such an easy, foolproof kettle-corn recipe. I add slightly more sugar, and it's even better! It has become a staple whenever we rent a movie in our house.

Moussaka

This is excellent - I have never cooked moussaka before, and wasn't sure about how it might come out, but it was a hit. I dry-sauteed the eggplant in a non-stick wok, and it was fine; although next time I will cook the eggplant longer, since some of the thicker pieces were slightly undercooked. I also used the suggested herbs as a substitute for fines herbs with no problems. I made the mistake of ignoring the other warnings about the amount of time and work this requires, and it made for a late - (but much appreciated!) dinner.

Easy Pavlova

This is certainly easy - I was a first-timer when it came to pavlova, and this was a cinch. Everyone who tried it loved it! Like the other reviewers, thanks for the great cooking tips.

Mexican-Style Stuffed Peppers

This recipe was very easy to make, although I changed the peppers to a red and yellow mix, the rice to brown rice and the salsa to spicy for added flavor. I didn't plan enough time to cook the rice though (45 mins!) which was the only difficulty - more my fault than anything else. This recipe froze well, so the extra portions make great lunches at work.
