Crispy and Tender Baked Chicken Thighs

Reviewed: Apr. 23, 2014
Fabulous! The entire family loved it! I had to use onion powder because I didn't have onion salt and had read other reviews that had done the same. Otherwise, seasoned and cooked exactly as directed. My daughter is a VERY picky eater, and she likes her chicken the way she likes her chicken. Not only did she eat this like there was no tomorrow, but she has also asked me to make it again. It's so easy peasy, we are having it for dinner again tonight. Definitely on the weekly rotation!!

Three Animal Italian Meatballs

Reviewed: Feb. 2, 2014
These are SO yummy! I made these exactly as the recipe stated ( ok, not EXACTLY... We have to eat gluten free, so no oats and brown rice crumbs in place of Italian bread crumbs). They turned out just perfect. I am throwing half in a Swedish sauce, and the other half in a tomato based sauce. Thank you for this easy peasy recipe!

Chicken Scampi II

Reviewed: Nov. 17, 2013
LOVED this. I read about 20 of the most current reviews, and then made the suggested changes by adding the white cooking wine and dredging the chicken first. It was SO good. I mean, ya, that good. My very picky daughter who only eats rotisserie chicken from the market, (and bacon) ate this up and my husband had 2 huge helpings. This is NOT a healthy dinner alternative, so if you want healthy, are on a diet, or are going to change the entire recipe to fit your lifestyle, find something else. This is Naughty good the way it is. Embrace the naughty and enjoy this meal!!!

Maple Salmon

Reviewed: Dec. 27, 2012
Very good and SO easy to make. Next time I will marinate it longer and probably only cook it for 15 minutes. This will be our new Salmon staple! Thanks!

Simple Slow Roast Chicken

Reviewed: Nov. 15, 2012
Very good and simple recipe. The only thing I added was lemon, along with the onion, in the cavity. Cooked to perfection!

Delicious Chicken Casserole

Reviewed: Nov. 15, 2012
Loved this recipe. Made a few changes because I needed it to be gluten free, and wanted to use what I had on hand ..2 cups of brown rice, 1 box of GF cr of Celery soup and 1 box of GF Cr of Ch soup, added extra sour cream ( actually, my son did that!), and then topped with Cornflakes instead of the crackers. My kids absolutely LOVED it, and they are picky eaters! This is definitely a comfort food casserole that is going to be a winter staple around here!

Bacon Cheeseburger Meatloaf

Reviewed: Nov. 6, 2012
I enjoyed it, but it didn't get great reviews from the kids. Was a fun twist on a regular meatloaf...

Easy Garlic Broiled Chicken

Reviewed: Nov. 6, 2012
hands down best chicken recipe I've ever found. I have 5 kids, and every single one of them love this recipe. I have made it 3 weeks in a row, and they can't get enough. Husband's favorite chicken as well! The only changes I made were that I pierced the thighs and marinated them for about 2 hours. Yum Yum yum!!!!!

Grilled Chicken with Rosemary and Bacon

Reviewed: Sep. 9, 2012
Absolutely LOVEd this! I used tenderloins instead of breasts because that is what I had. Would use thin sliced bacon next time so it would get crispy. Going to try to figure out how to make it under the broiler so this can become an easy weeknight staple during the school year!!

Jose's Shrimp Ceviche

Reviewed: Apr. 26, 2012
Truly a wonderful recipe. We just got back from a trip to Belize where we ate Ceviche every day, made with shrimp, conch, or snapper. This recipe was almost exact to what we had down there. The only thing I did different was to add cucumber and I did not add the optional avocado or celery. Very tasty and authentic.

Alaskan BBQ Salmon

Reviewed: Apr. 26, 2012
I prefer the lighter flavor that this recipe allows, with the flavors of the salmon being just slightly topped by the "BBQ". However, my husband prefers more of the BBQ and smoky flavor, so I simply marinated half of the salmon overnight for him. Such a simple and very tasty recipe!!
