Crab Salad

This was delicious. I followed the recipe exactly, but cut it down for 2 people. 1/2 pound of fresh crab meat was plenty.

Penne with Chicken and Asparagus

I made a few substitutions because of what I had on hand. I found I was out of chicken broth so I substituted some herbed olive oil and some white wine to steam the asparagus in. I used pre-grilled herbed chicken because I was in a hurry. I also added mushrooms, as another reviewer suggested, sauteed with the garlic in butter. It was delicious!

Dandelion Greens with a Kick

I had never dared to try dandelion greens before and both my husband and I enjoyed this recipe very much. I did feel that the greens were not as sharp as I had expected, and I'm not sure whether that is because I bought organic greens in the supermarket or whether soaking them took away more of the sharp flavor than I would have liked. I am a bit uncomfortable with digging them out of my lawn. I know I don't put anything poisonous down on the grass, but still, it makes me nervous.

Spicy Avocado Chicken

This was delicious made according to the recipe. I think another time, rather than add meat as some have suggested, I might add nuts -- pignoli or chopped walnuts -- to give it a bit more character.

Italian Wedding Soup I

This is delicious. I cooked the pasta separately, added zuccini and celery and sauteed the veggies in olive oil to bring out the flavor before adding the broth, as some others suggested. My husband and I both loved it.

Layered Eggplant Hamburger Casserole

This was perfect for a cold winter evening. I used mozzarella between the layers and jar sauce since I had them on hand. Otherwise I followed the recipe exactly and we both thought it was delicious.

Different Chicken Cordon Bleu

We were quite disappointed in this. Chicken Cordon Bleu is my husband's favorite. I was so pleased to find this easier recipe, and particularly intrigued by the suggestions of how to lower the calorie content. Unfortunately the flavors were overpowered by the sauce. Where's the cheese, he wanted to know. If I ever try it again, I will take others' suggestion and roll the chicken, ham and cheese together before putting it in the oven.

Christmas Morning Frittata

This was good, but I think next time I would leave out the breadcrumbs. I added broccoli to the stir fried mixture as we like a veggie-rich frittata. Very nice.

Eggplant Bake

I baked the breaded eggplant in the oven instead of frying it and we really appreciated the way this made the dish a lot lighter. I used two medium tomatoes to one small eggplant, but felt it could have used more tomato. Thanks for a delicious meal!!

Pineapple Upside-Down Cake II

I was looking for a recipe that called for fresh pineapple instead of the canned that I usually use. I sliced it as it shows in the picture instead of cutting it into chunks, but I doubt that could have made much difference in the sogginess. We had one slice each and tossed the rest. Besides the soggy middle, the all-purpose flour made the corners that did cook properly too dense. I have another recipe that calls for cake flour and it is much lighter. I won't be making this again.

Cheesy Baked Eggplant

My husband termed this acceptable, which means not great in his book. Admittedly I used eggplant from last summer's CSA that had been peeled and frozen. It had little flavor. I would like to try it again with fresh eggplant baked first in the oven, as directed. I did like the addition of fresh spinach in the layers.

Lamb Chops with Balsamic Reduction

This was absolutely delicious. I rarely cook meat inside the house, preferring to cook it on the grill to cut down on the mess, but this was good enough to be worth the extensive clean up afterwards.

Pink Grapefruit Blueberry Sorbet

This is delicious! It took a really long time to freeze, probably because I added the vodka. I might try leaving it out next time, to see if that makes a difference in the consistency. It never did freeze really solid, and you had to eat it quickly before it melted. But it was really yummy! A relatively guilt-free sweet treat.
