Rosemary Carrots

These were just okay. I really see no need to add sugar to carrots, which are sweet enough on their own. the herbs are a nice addition, though.

Pineapple Upside-Down Cake II

I was looking for a recipe that called for fresh pineapple instead of the canned that I usually use. I sliced it as it shows in the picture instead of cutting it into chunks, but I doubt that could have made much difference in the sogginess. We had one slice each and tossed the rest. Besides the soggy middle, the all-purpose flour made the corners that did cook properly too dense. I have another recipe that calls for cake flour and it is much lighter. I won't be making this again.

Cheesy Baked Eggplant

My husband termed this acceptable, which means not great in his book. Admittedly I used eggplant from last summer's CSA that had been peeled and frozen. It had little flavor. I would like to try it again with fresh eggplant baked first in the oven, as directed. I did like the addition of fresh spinach in the layers.

Lamb Chops with Balsamic Reduction

This was absolutely delicious. I rarely cook meat inside the house, preferring to cook it on the grill to cut down on the mess, but this was good enough to be worth the extensive clean up afterwards.

Pink Grapefruit Blueberry Sorbet

This is delicious! It took a really long time to freeze, probably because I added the vodka. I might try leaving it out next time, to see if that makes a difference in the consistency. It never did freeze really solid, and you had to eat it quickly before it melted. But it was really yummy! A relatively guilt-free sweet treat.

Kielbasa with Peppers and Potatoes

This was very good. I added several different color peppers, mushrooms and onions to use them up. I didn't have problems with it being too greasy, as some have said. Perhaps that is because I used turkey sausage instead of real kielbasa. In fact, I would say the substitution made it not greasy enough. I stirred them frequently, and every stirring scraped the crispy bits off the potatoes and left them in the pan. Next time I will try either more oil, real kielbasa or cooking it in the oven as others have suggested.

Julia's Watermelon Gazpacho

This was absolutely delicious. A wonderful combination of sweet and spicy. I skipped the pineapple juice because I didn't have any handy, and I substituted cayenne pepper for the jalepeno as I didn't have one of those on hand either. I had tried a watermelon gazpacho at a local restaurant and they shared that secret substitution. It turned out to be a very successful. I look forward to trying it with the jalepeno next time.

Chef John's Stuffed Summer Squash

It's CSA time and I was looking for something interesting to do with too much summer squash. This was delicious! I couldn't find the spicy lamb sausage, so I improvised: I used ground lamb and spiced it with minced onion and garlic, cumin, paprika, and cayenne as well as salt and black pepper. This seemed easier than removing the casing from an already prepared sausage anyway. I considered skipping the cheese to cut down on the richness, but decided to use feta instead of the goat cheese. It really added an interesting dimension, so I am glad I didn't leave it out. Because I didn't have the small round squash pictured, I used a larger elongated "mediterranean" squash, and it took longer to bake. More like 40 minutes. Both my husband and I gave it 5 stars. I will definitely use this recipe again. Also, I felt badly about tossing the scooped out squash so I sauteed some onion and garlic along with the chopped up squash, added a half a seeded fresh tomato and stir fried the mixture with some cooked brown rice. It made the perfect side dish to accompany this meal.

Chicken, Asparagus, and Mushroom Skillet

This was very nice. I followed the recipe exactly, except I added a bit more liquid, both lemon juice and wine. Next time I think I would cook the mushrooms separately in butter so that they brown a bit.

Mexican Rice III

This was good. I used less cilantro than recommended because I'm not fond of that flavor when it is overly strong. I also added the juice of 1/2 a lime, as others suggested. Next time I would use a whole fresh lime.

Mexican Mole Sauce

This was okay. I doubled the chocolate as others had suggested, used two cans of tomato sauce instead of the soup asc I didn't have any soup on hand. I served it over pre-ooked chicken breasts. If I try it again, I will follow the recipe as written and use it to cook the chicken in.

Taco Casserole

This was really delicious. I took it to a church luncheon so added some things to stretch it further -- green peppers, as others have suggested, and a can of black beans. I skipped the tomato soup and used the diced tomatoes the recipe calls for plus a large jar of Newman's Own medium-spicy salsa with pineapple. Everyone loved it.

Ginger Beef Stir-Fry

This was a nice change from my usual stir fry, which doesn't include the sweet plum sauce and the salty peanuts. I followed someone else's suggestion for plum sauce substitution, combining apricot jam, honey, soy sauce and garlic, and it was great! I made half the recipe for just the two of us but doubled the sauce, and it still wasn't enough sauce. Next time I would triple the recipe for sauce. Still, it was yummy!

Seared Sea Scallops

Both my husband and I loved this recipe. I used less flour than called for and mixed the parmesan in with the coating mixture as others suggested. The dish was very light and delicious!

Apple-Glazed Pork Chops

This was pretty good. It was the apple mixture and the gravy that saved it from being unpleasantly dry. The chops may have been over-cooked, as I kept it warm for a bit before serving. I will try it again before saying for sure.

Sweet and Spicy Swiss Chard

I made this exactly as directed, with the exception that I used all green chard, as that was what I had on hand. Both my husband and I loved it! The ginger and the maple syrup, exceptionally delicious! I can't wait to make it again with the rainbow chard.

Apricot Ginger Game Hens

This was okay. Not a lot of ginger or apricot flavor, which was disappointing. I marinated it overnight, and basted it conscientiously, but still it was a bit dry.
