Chocolate Cheesecake II

I made this for a Maya themed dinner. It was a complete success! Excellent recipe. Raspberries were not available (not sure why in the middle of August) but used strawberries instead. I think the two chocolates in the cake made it deep with flavor. Then the chocolate "icing" on top just gave it the extra punch. I did pay attention to the thickness of the icing. I could see how too much of the icing would make it hard to cut. by far the best chocolate cheesecake recipe I have used!

Tom Ka Gai (Coconut Chicken Soup)

This is such a great soup! I add mushrooms (the smaller the better) and put a scoop of rice in the bowl before I ladel the soup in. Very Very Good!

Cajun Ponchartrain Sauce

Wow! Fabulous! Most Excellent .... all the above and more. I used way too much shrimp but whose complaining, should have doubled the mushrooms. I did use the baby bellas - the strong mushrooms were great with the sauce. I was afraid the simmering with the shrimp in the sauce would have made them tought but not so. It was a great New Year's Eve dinner. thank you

Balsamic Roasted Pork Loin

Very good however a bit more subtle than I prefer. I wish I had followed previous reviewers and made the pan drippings gravy. One of the best things about cooking this is how yummy it smells. The Balsamic Vinegar fills the house - in a very good way. I can't imagine thinking that was a bad smell - to each his/her own I guess. I will make again but perhaps use a tent over to tenderize it a bit more and reserve some of that precious dripping.

Grilled Orange-and-Bourbon Salmon

We have enjoy this summer's low prices on salmon and this marinade has been our favorite. Sweet and sticky with the citrus all somes together on the grill.

Indian Tomato Chicken

Prepared this for dinner last night. The effort in the beginning of the recipe was well worth the complex layering of flavors. I used a larger size of tomatoes and had a bit more sauce, which was promptly gobbled up. I was amazed that I had all the spices needed.
