Roasted Acorn Squash Soup

This recipe turned out fairly good and it was souper easy! I ended up omitting the cream. I just felt like it didn't need it. I think next time I would reduce the cinnamon and nutmeg. I've got a stuffy nose and I feel like the cinnamon and nutmeg is overpowering.

Cream of Mushroom Soup I

I ended up using about 3/4 cup of dried mushrooms because thats what I had on hand. That meant that I also needed extra liquid but I ended up adding less than I thought I would need - about 1/2 cup. Mine turned out incredibly mushroomy but very delicious.

This turned out tasty, however, I used dry beans which take significantly longer to cook and need at least double the liquid which turned out a little annoying.

Bread Pudding II

This was a fantastic way to use up stale bread. I also didn't find it overly sweet which was nice. I used dry currants instead of raisins. I think next time I'll try apples and nuts!

Super easy and cheaper to make than lobster bisque. It might be nice to see a healthier version but other than that, I loved this recipe. A great way to use up all the fish stock I had!

Puerto Rican Pork Roast

This was delicious and fast compared to other roast recipes. I omitted the olive oil since my roast was pretty fatty already. I also cooked it in a bed of root vegetables which I stirred every 15 minutes in the drippings.

Butternut Squash Risotto

This was a tasty yet different way to prepare butternut squash. It was a simple recipe which I liked but I think next time I would add some more seasonings like sage or thyme? If you want a vegan version, use vegetable stock instead of chicken stock, olive oil instead of butter, and nutritional yeast instead of parmesan cheese.

These were great! I used Yukon Gold and was lazy and didn't rinse them. I also added a bunch of thyme and they turned out fantastic! My only advice is to make sure your oil stays hot while cooking, otherwise they will turn soggy.

Kickin' Collard Greens

This was delicious and easy, and I will definitely try it again. The only thing I would change is the amount of salt. This recipe was incredibly salty. If you try this recipe, save the salt for the very end and add just to taste.

Tomato Zucchini Casserole

This was absolutely delicious! My only complaint was that it turned out a little watery probably because I decided to use the fancy style shredded parmesan instead of the cheap sprinkle kind. Regardless, it tasted great!

Rosemary French Bread

The first time I made this recipe, it caved in and did not hold its shape, even after I added a bunch of flour. This time, I set the machine on the dough setting and then shaped the dough into small sandwich sized loaves. I don't think this dough is meant to hold the large loaf shape of the bread machine pan. I also did not include the rosemary or garlic and it was still pretty delicious!

Whole Wheat Honey Bread

This recipe turned out so moist considering it used only whole wheat flour! I was also surprised that with a whole 1/3 cup of honey, it didn't turn out too sweet. The only thing I changed was using some whey or milk in place of water instead of water and milk powder.

Homemade Ketchup

This turned out great! I used minced green onions, garlic, and celery instead of the garlic powder, onion powder, and celery salt. I didn't puree it because I kind of like the chunky consistency. I think next time I will try peeled pureed tomatoes and cut the sugar a bit. All in all, easy and delicious!
