Skillet Chops with Mushroom Gravy

This is a stupendous recipe. I used 3 large, thick boneless pork chops and I had just enough gravy for them. I increased the milk to 1 cup and it was definitely not too much. I also used Italian style bread crumbs and added the leftover bread crumb/cheese mixture to the gravy to make a wonderful, savory sauce that thickened nicely and just turned out fabulous. I used fresh portabello mushrooms as well. Do NOT hesitate to make this recipe but do add the extra milk or you will be sad that you do not have enough gravy! Oh, I forgot to mention that I added about 1/4 cup of red wine to the sauce for another dimension of flavor. Yum!

Cocktail Meatballs III

These were tasty but the meatballs themselves were a bit dry. I used extra lean beef and maybe should have used some extra milk to moisten them more. The sauce was excellent though!

Party Pinwheels

These were incredibly tasty. I made these for a dinner party and everyone wanted the recipe. I added the shredded cheese but it was not necessary as the cream cheese made it rich enough. The crunchy vegetables were a nice contrast to the rich salty cheese spread.

Cream Cheese Mints

We did not care for these at all. Way too sweet and not enough peppermint flavor even though I used way more than the recipe called for. They were also very time consuming to make and difficult to mix to taste no better than they did.

American Lasagna

I thought this was good but not anything special. I did double the sauce and ended up using most of it. I did not double the meat though and still had PLENTY to go with the sauce. It was tasty but seemed to be missing that special little something.

Garlic Butter

Oh my gosh, I will use this on everything but my morning cereal! This makes the best garlic bread. For the italian seasoning I used Emeril's Italian Essence. Very easy and super tasty.

Caramel Filled Chocolate Cookies

These are insanely good!! I mean sinfully so, really. I did add an extra 1/2 cup flour and 1/3 cup cocoa but no salt. I also used chocolate caramel Reisens and they worked very well. With the first batch I did have some trouble with them running and making a sticky mess. I only let them sit for the 3-4 minutes suggested. After that I let them sit for 10 minutes and them picked them up by hand instead of using a spatula. I found the spatula tears the delicate bottoms even when they have cooled quite a bit. I also used Silpat liners which helped tremendously but if you don't have those parchment paper would be a real assest. They still leaked but by letting them cool longer and transferring them by hand this was not a problem. Then, by the time they cooled completely on the wire rack the caramel that had leaked was hard enough to not be a bother. Leakage or not these are totally worth making! I did not find them time consuming at all and, after chilling the dough for about 4 hours it did not stick to my hands. Make these soon and enjoy!!

White Chocolate and Cranberry Cookies

Very tasty and unusual cookie. These are a good choice when the same old same old gets boring. The tartness of the cranberries marries very well with the super rich and sweet taste of the white chocolate chips. Makes a very crunchy cookie which I don't usually like but the texture works very well in this combination. Also, very pretty to serve to guests.

Award Winning Soft Chocolate Chip Cookies

These are really quite awesome. I make my cookies in huge batches and freeze them so we always have fresh hot cookies whenever we like. These freeze very well. Just bake them at 325 degrees for 20-25 minutes.

Apple Dumplings I

OMG, this is one of the best dessert recipes I have ever tried! Thankfully, I read each and every review before trying them. Please, people, do make the recommended adjustments and I promise you will not be disappointed! I diced the apples and coated them with cinnamon/sugar. I baked the dumplings on one side for 20 minutes. Then I turned them and baked for another 10 minutes before adding the sauce. I made up the sauce minus the water and had to add just a tablespoon or so to get it the right consistency. I also used 1/2 white sugar and 1/2 brown sugar and ended up with this beautiful caramel sauce. I added the sauce the last 10 minutes of cooking and served with a scoop of vanilla ice cream. I had people begging me for the recipe and I have made it twice this week. My husband has requested that this be THE dessert for Thanksgiving dinner and I will be only to happy to oblige. Folks, it really is awesome!

Black Bean and Corn Salad II

This was great! The various textures really made this salad refreshing. The softness of the beans, tomatoes and avocadoes balanced well with the crunch of the pepper, onion and corn. The dressing coupled with the cilantro gave it a very nice zing. This is a great recipe for the summer months when corn is in season. I used fresh corn that I blanched and then cut off the ear and it worked great.

Baked Salmon II

This was delightful. Baking the salmon in the foil packet steams the fish beautifully. It just melts in your mouth and the marinade is a superb blend of seasonings. This is one of the best ways I have found to cook fish without it being either overdone or under done.

Connie's Zucchini "Crab" Cakes

These are absolutely incredible! They are a bit messy to make and I drained the zucchini all day with a weight on top. But, they are so incredibily delicious that I did not mind the mess one bit. Here's a little tip: if your mix is really wet then form the patty in your hand, sprinkle flour on one side, pat it in then turn over and do the same thing on the other side. Then kind of gently toss in the pan. I had no trouble as long as I rinsed my hands after every couple of patties. My husband does not like squash and he scarfed these right down. They are incredibly tasty!
