Megan's Granola

This is not something I eat, but I make it for my husband. He loves it. You really can't mess it up. I add 1 c. of all kinds of nuts, flax seed, etc. I don't add the dried fruit since he doesn't want any. It does smell wonderful while it is cooking though. He is always asking me to make more.

Persimmon Bread II

This recipe is the first time I have ever cooked with or even tasted persimmons. I think these turned out great. The alterations I made were: 1/2 c oil and 1/2 c. applesauce instead of the full cup of oil. 3/4 c brown sugar and 3/4 c. white sugar. I still think it was too sweet. Omit the water all together. I didn't add nuts but will next time. I will add some ginger next time too. The texture was wonderful and very moist. This made 18 muffins but I could have been stretched to prob. 22. I just finished making some more persimmon puree and will be making more muffins to share at work.

Dijon Pork Chops

My family and I enjoyed these pork chops very much. The dijon gave it a little extra "kick". I did not bake them, but rather lightly pan fried them in a little butter. They were very juicy. This is a keeper!

Zucchini Bread IV

I use this recipe all the time. It always turns out great! Very moist. The only alterations I make are the following: 1/2 cup oil and 1/2 cup of cinnamon applesauce 3/4 cup to 1 cup of nuts. I prefer pecans. I add several handfullls of raisins. A couple of times I added chopped dried fruit and it was ok. Dried apricots didnt go too well with the flavor. This is a zucchini bread tat I will stick with. No need to look any further!

Dump Cake IV

I LOVE this recipe! I make this if I am in need of a quick, but tasty dessert! Although, I think it tastes better the next day! My only alteration is that I use 1/2 cup of melted butter instead of a full cup. This is a winner!

Mrs. Sigg's Snickerdoodles

I liked the flavor of this cookie a lot, but let me give you some background. I cannot cook cookies. I have no idea why, but I can never get any cookie to turn out the way it should. And this recipe, once again proved I have no business baking cookies. The dough was way too sticky to roll into a ball. I followed the directions exactly and they ended up being paper thin. The flavor is great, but they are too greezy, and buttery. I doubt I will make these again. I'm doubting if I will ever make any cookie again. But if you want carmel pecan yeast cinnamon rolls, or a 4 tier wedding cake, I can make those, no problem at all! HA!

Gelatin-Flavored Popcorn

I LOVE this recipe! It is always a favorite around Halloween and Christmas! All the flavors are good. Although, the grape didn't turn out as well as I had hoped. It looked gray and didnt have a real grape taste.

Pumpkin Gingerbread

My husband and I enjoyed this bread very much. The changes I made were doubling the spices, making muffins instead of loaves (made 30 muffins) and I used Tree Top Naturally Sweetened Cinnamon applesauce instead of oil. They are great! Next time I will put some walnuts in some of the muffins.
