Megan's Granola
This is not something I eat, but I make it for my husband. He loves it. You really can't mess it up. I add 1 c. of all kinds of nuts, flax seed, etc. I don't add the dried fruit since he doesn't want any. It does smell wonderful while it is cooking though. He is always asking me to make more.

Persimmon Bread II
This recipe is the first time I have ever cooked with or even tasted persimmons. I think these turned out great. The alterations I made were: 1/2 c oil and 1/2 c. applesauce instead of the full cup of oil. 3/4 c brown sugar and 3/4 c. white sugar. I still think it was too sweet. Omit the water all together. I didn't add nuts but will next time. I will add some ginger next time too. The texture was wonderful and very moist. This made 18 muffins but I could have been stretched to prob. 22. I just finished making some more persimmon puree and will be making more muffins to share at work.

Zucchini Bread IV
I use this recipe all the time. It always turns out great! Very moist. The only alterations I make are the following: 1/2 cup oil and 1/2 cup of cinnamon applesauce 3/4 cup to 1 cup of nuts. I prefer pecans. I add several handfullls of raisins. A couple of times I added chopped dried fruit and it was ok. Dried apricots didnt go too well with the flavor. This is a zucchini bread tat I will stick with. No need to look any further!
