My Mother-in-Law's Plum Bread

Reviewed: Jul. 26, 2013
My plum tree runneth over so I am delighted to have found this recipe earlier this week. I am going to make it again today, once again I am tripling the recipe to give as gifts and stock my freezer. It is a delightful sweet and sour (plum skins) cake. I served it at a barbeque for dessert spread with plum sauce and topped with whipped cream. Everyone raved about it. I am taking to heart the review that it freezes well and plan on giving a loaf of bread/cake with a jar of either plum jam or sauce. Oh, I used 1/2 brown sugar 1/2 white in cake and cut back on brown sugar topping. Delishious.

Reviewed: Jan. 4, 2013
I made this for dinner tonight and my cauliflower hating husband liked it. I was out of fresh garlic so I used dried. I mixed it with the olive oil and let it sit a while, along with the salt and pepper. Used very good parmesean along with Kraft and it ws excellent I can't wait to try it again but with fresh garlic. Very very tasty. I hate doing dishs so I mixed and baked in the same ceramic casserole.

Sweet Potato Rolls

Reviewed: Nov. 23, 2012
These were the most beautiful and tasty rolls I've ever made. Made dough in my bread machine and followed recipe to a T. Will make again as they turned out great, the dough out of the bread machine was amazing, not sticky at all. Thank you.

I made this but with frozen, unsweetened mixed berries and it turned out wonderful. Served it in place of cranberry sauce. Beautiful and tasty.

Gingerbread Boys

Reviewed: Oct. 31, 2012
Wow, these are wonderful, crisp and chewy at the same time. The orange peel adds so much to the spices. I too made a few changes, mainly using dark molassas and about 1/4 tsp. more of cinnamon. I used a pumpkin cookie cutter and made them for my grandkids for haloween. I will use this again at Christmas for cut out cookies. Oh I added about 1 tablespoon more molasses and rolled on floured partchment paper. No problems.

Bierocks (German Meat Turnovers)

Reviewed: Oct. 15, 2012
I have made these many times and this recipe is good just as it is written. I have changed it to fit our eating style, using frozen whole wheat bread dough and ground turkey. Still very very good. I freeze them and put them in my husbands lunch. He just heats them a bit in the microwave at work. We take to the beach, on day hikes. They are wonderful.

Vegetable Chowder

Reviewed: Sep. 30, 2012
Very good, just the taste I was looking for. Used homemade chicken stock, non fat milk, 2 tbls. butter. Did not have red pepper and husband doesn't like cook carrots so doubled the brocolli and cauliflower. Had to add a bit more milk as it was too thick. Used 1 1/2 c. sharp cheddar. Before adding cheese I used my submersible hand blended and blened it about half way. Wow, it is excellent. Will make again.

Banana Crumb Muffins

Reviewed: Jul. 22, 2012
No doubt about it, this is the best muffin recipe ever. Light, flavorful. Only change, I was out of cinnamon and used pumpkin pie spice in its place. Oh, I also cut down white sugar to 1/2 cup and it was plenty sweet as my banana's were very ripe and sweet. Took 18 min. to cook. What a treat for a Sunday morning breakfast.

Almond Drops

Reviewed: Apr. 2, 2012
Ok, I didn't have almond extract so I used vanilla, doubled the sliced almonds (toasted) and in half the dough added dark chocolate chips. My new favorite cookie. Crisp, crumbly texture. Looking forward to making them again with the almond extract. A KEEPER!

Cranberry Sauce

Reviewed: Nov. 23, 2011
Made the cranberry sauce using 1/2 brown sugar and 1/2 white and just a tad orange peel. OMG! It is amazing and so simple. I am going to use this to top a cheesecake for my Christmas dessert. So easy, so delicious, the true cranberry flavor comes through.

Applesauce Cake I

Reviewed: Nov. 6, 2011
At first I thought a mistake was made because there were no eggs listed. After reading a review I saw that this was just the way the recipe was. I decided to give it a try and boy am I glad I did. I made a few changes and it turned out superb beauce it was such a good recipe to start with. I used brown suger and cut it back by 1/3. I toasted my walnuts and used unsalted butter, so I added 1/4 teaspoon of salt, just in case. I also grated in fresh nutmeg and since I doubled the recipe, I used 1 cup of oat bran for one of the cups of flour. My house smells divine, a perfect cake with a cup of tea or coffee any time of year but especially on a cold rainy day like today.

I put 1 1/2 cups chopped walnuts, divided the dough in half and put brandy soaked raisens in one half and chocolate chips in the other. I can't decide which I like better, oh so tasty. Oh yeah, i also used unsalted butter. This is a keeper.

Peach Muffins

Peach cobbler taste in a muffin. I cut the sugar back by 1/2 cup and they were still plenty sweet and flavorful. I was able to make 12 regular sized muffins and one loaf pan for my freezer. A keeper for sure.

Sopapilla Cheesecake Pie

Reviewed: May 8, 2011
This is as good as everyone has stated. My mom made sopapilla's when I was a kid, not sweet, just the savory ones and so this really caught my interest. I used 3/4 cup sugar with cream cheese and less than 1/2 cup for top and only several tbls. honey. Plenty sweet and delicious. Will make again and again, already being requested.
