Tangy Slow Cooker Pork Roast
Comfort food at its finest! I made some alterations based on what I had in the fridge. I used a pork tenderloin that I cut in half and stabbed with a fork so that the juices would soak inside. I used brown sugar instead of white sugar, and added a nice squeeze of maple syrup. I cut up about 4 celery stalks and about 4 carrots and threw them in the crockpot around the pork. I made horseradish mashed potatoes and topped them with the pork and veggies. We ate this 2 nights in a row it was so good! It turned out like a pork stew...this meal was delicious, especially on a cold, winter night.

Cauliflower Salad
Excellent!! My boyfriend described it as a surprisingly delicious cross between egg salad and pasta salad. I didn't have all of the ingredients so I altered it a bit: I used dijon mustard and dill mustard. I didn't have dill pickles so I added sweet india relish. I didn't have frozen peas, so I added a frozen corn/carrot/green bean medley. I used turkey bacon, and I omitted the onion because I don't like raw onion in salads. It turned out so well and is a great way to get kids to eat cauliflower because you don't realize you're eating cauliflower. I can't wait to make this again for the first summer BBQ!!

Maple Apple Chicken Burgers
This was surprisingly delicious!! I took a risk by making these burgers because the ingredients together sound a little odd and ground chicken can be rather bland. Boy was I wrong! I followed the recipe exactly, except I used a small honey crispy apple, and my boyfriend and I ended up eating a second burger each! I topped the burger with a slice of turkey bacon, which is a must, it kicked up the recipe to a 5+. It added a smoky flavor and a nice crisp.
