I have a son and a husband who I take care of, usually by cooking.
My favorite things to cook
I love to make the basics, but I like to experiment a lot as well. I often make my father's baked beans, potato salad, tuna salad and pork steak recipes. He is the one who instilled a love for cooking in me.
My cooking triumphs
I am really good at substituting ingredients to make a recipe healthier. I just don't always choose to, as I love fatty foods. I am excellent at cheesecakes. I am fantastic at making Mexican food. I would love to go study with a cook in Mexico or Spain.
My cooking tragedies
I once made an orange carrot soup from The Essentials of Vegetarian Cooking cookbook. Don't even try it! I am terrible at frying, but I want to be better. Last time I made Chicken Fried Steak it was a disaster. I have always been terrible at baking cookies, they turn out like little poofy biscuits.

Ham and Fresh Basil Pinwheels
This was really good, but I made some changes. I am not a big fan of sun-dried tomatoes that are bottled from the store. They are usually too oily and I think putting them in there would be too strong. I put the sun dried tomatoes, cream cheese, basil (dried), and some garlic powder in a food processor and mixed it together like a paste. Then I put that as the spread. Then I put the ham, and instead of the red leaf lettuce used baby spinach down on the tortillas. It was exellent!

Tuna Dip II
This just wasn't that great. I have had way better tuna dips. Maybe I needed to make some changes, but i didn't really like it. It needed to be thicker, like a cheese ball.

Spinach Stuffed Chicken Breasts
These were amazing. I always follow the review suggestions though. It is definitely a keeper.
