Blueberry Pie

Reviewed: Jul. 10, 2002
I loved this pie recipe! It was super-easy to make, and it was delicious! After reading the other reviews, I put in 4 tbsp of cornstarch instead of 3 tbsp, and it set without a problem. Also, I added a splash of lemon juice to the blueberry mixture for some extra flavor, and I covered the edges of the pie crust with aluminum foil until the last 15 minutes (to prevent overbrowning). A great recipe!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Dec. 11, 2003
*These cookies are the BEST I have ever made!* I am a huge fan of chewy, moist chocolate chip cookies. These are perfect! I even shipped these cookies across the country (in zip-lock baggies and a box), and they stayed chewy days later! Here are some tips that will ensure that your cookies turn out perfect: --Add chocolate chunks instead of chocolate chips. It makes the cookies REALLY amazing. --Make sure to add: 1/2 tsp of SALT, and 1 tsp of baking powder. It definitely helps. --Halve the recipe to 36 cookies. The original recipe makes a ton! --Make these cookies big! A great treat! Hope you enjoy these cookies as much as I did! Enjoy!

Hershey's ® Gridiron Cake

Reviewed: Feb. 2, 2004
I made this cake for Super Bowl weekend, and everyone loved it! I used boxed cake mix to save time, and I cut down on the cost by using piped frosting for both the lettering and yard lines. Like many of the other reviewers, I used Kit Kats instead of Twizzlers on the goal posts (much easier to handle). This cake was a HUGE hit, and everyone had fun nibbling on their favorite teams! A fantastic recipe idea!

Spring Biscotti

Reviewed: May 20, 2004
Amazing Biscotti! I did change the recipe slightly: I used Splenda instead of sugar, added a cup of unsalted and chopped almonds instead of pistachios, and just used 2tsp of vanilla instead of orange extract. Also, I used some leftover white cholocate to dip the bottoms of the biscotti, which gave it a real gourmet touch! Everyone loved these, and they were remarkably easy to make!

Apple Bran Muffins

Reviewed: Sep. 11, 2004
Wonderful breakfast muffins! I wanted a muffin that was high in fiber, low in fat, easy to make, not too sweet, and delicious. These muffins fit the bill perfectly! I freeze these muffins and eat one in the morning during the week (instead of eating nutri-grain bars that are loaded with sugar). Tips: grate a large granny-smith apple instead of chopping it (you can keep the skin on this way and it is just as fast as chopping), add more cinnamon and some ground cloves for spice, and add some Splenda or raisins if you want your muffins sweeter. Enjoy!

Oat Applesauce Muffins

Reviewed: Sep. 11, 2004
These muffins were pretty good but not fabulous. The buttermilk gave the muffins a nice flavor, but the 2-hour wait was frustrating, and the muffins came out rather dense. I added some cinnamon and raisins that for more flavor, and I recommend those additions. Personally, I liked the "Apple Bran Muffin" allrecipe much better, but these aren't bad!

Scottish Oat Scones

Reviewed: Nov. 17, 2004
Yummy! They do not look so beautiful when they are done, but they taste delicious! I followed other reveiwers' suggestions and added cinnamon and a little more sugar, and I used raisins instead of currants. Crumbly but delicious!

This was one of the best guacamole recipes I've ever tried! I used 4 avocados instead of 3 to stretch the recipe a bit, and it still tasted great. Mash 2 of the avocados well, and then keep 2 of the avocados very chunky for a good texture. I also used a little more lime juice and salt in the recipe to bring out the flavor more. If the avocados are not totally ripe, try adding a few tablespoons of sour cream to make it a creamier guacamole. Enjoy!
