Ratatouille

We all thought this was a great dish! I was almost out of Parmesan cheese, so I put some mozzarella on it after I got it out of the oven. I think it would be helpful to have approximate cup measurements for the ingredients, as there was no way my interpretation of size of vegetables would fit in a 1 1/2 quart dish. I served it with white rice and grilled sweet Italian sausage links. I will definitely be making it again with a little more tomatoes, eggplant, and cheese.

Stuffed Pepper Soup I

This soup was fantastic! The best stuffed pepper soup I have ever made! The only change I made was I didn't use soy sauce because I didn't have any. I used my homemade tomato sauce and home canned stewed tomatoes instead of the diced. Oh so good!

Garlic Cheddar Chicken

Oh my! This was delicious!! The only things I did different is I didn't precook the garlic (I'm too lazy!) and I made it on aluminum foil on the grill because it was a beautiful day and I didn't want to turn on the oven! Fantastic!

Mother's Ham Casserole

My family and I thought this was wonderful! The only things I changed was I added a little mozzrella cheese because I didn't have enough cheddar, I used crushed Multi-Grain Club crackers instead of bread crumbs, and it definitely needed to be in a bigger dish! I will be making this again! Yum!

Creamy Cheesecake

This was the first cheesecake I have ever made, so I didn't really know what to expect. I put just a splash of lemon juice instead of the zest (because I didn't have any). And even though I baked it for at least 35 minutes, the middle still wasn't done. Next time I will try leaving it in the oven as others have suggested. Great flavor and tastes great with the Blueberry Sauce from this site!

Blueberry Sauce

I thought this sauce was fantastic! I forgot the cinnamon and didn't have almond extract, and my sauce didn't need to simmer after adding the cornstarch and water. I agree that the flavor changes as it sits. Licked my plate clean!
