Cream Cheese Frosting II

Simple, easy, quick and delicious! Put this on my lemon cakes. Good just the way it is, only change is sometimes add a little bit of lemon rind or juice just to go with the lemon cake.

Chocolate Ganache

YES! YES! YES! This is great! So easy and quick! Liked it with the bittersweet, loved it with the semi-sweet. Tried it with white chocolate, did not work so well. Used ganache on ice cream cake, worked well and froze well. Also made a frosting, was easy and delicious, got great reviews on frosting for cup cakes. Again, semi-sweet was a bit better then bittersweet (personal preference). Also used to make chocolate strawberries. have made with and without the rum. Can't say I could really tell the difference. Love this!!

Microwave Lemon Curd

Was so excited to try this recipe. Made it for the holidays was so disappointed. It was so bitter and not good. Used as filling for lemon cake and all the cake was eaten and the filling was still left on everyones plates. Will not make again.

Best Big, Fat, Chewy Chocolate Chip Cookie

These were not as wonderful as everyone has made them out to be. They were good. Can a chocolate chip cookie be bad? I cooked for 10-15 minutes over the time limit, they were just not done. Made one batch with chocolate chips and one with butterscotch chips. Both were good, but the chocolate was way too much. Would make again but I would cut down on the amount of chocolate chips (never thought I would say that). Also reading more reviews is helpful. Will put in the fridge next time as well. Like I said was not amazing, but not bad either. Will defiantly make again to try and get the results others are talking about.

Famous Butter Chicken

First I butterflied my chicken breasts so they wouldn't be too thick and dry out. Made this using store brand whole wheat ritz like crackers. Double breaded the chicken with eggs and cracker crumbs. Added a little garlic powder to the top and cooked in skillet with some olive oil. Came out with a nice crispy crust. Chicken was nice and moist and not dry, probably because the chicken was not too thick. Worked well in the pan instead of the oven. Was good and will defiantly make again.

J.P.'s Big Daddy Biscuits

Followed the directions in mixing the dough. After reading other reviews I did not have the intentions of kneading the dough for 10-15 minutes, but the dough was way too sticky to roll out. So I kneaded the dough for a couple minutes then added a little bit of flour and rolled out the dough. My daughter was helping and I was not paying attention to the fact that she rolled the dough pretty thin so our biscuits were not very bit. They were more like small bite sized biscuits. I added a little bit of butter to the top when they came out of the oven. They were good, no one felt as though they were dry and tasteless. I will make this again and pay attention to size so they come out bigger, but overall these were good.

Glo's Sausage Fried Rice

This rice was good. I only made 1/2 the recipe, I was only cooking for 2 and we had plenty of leftovers. The rice is not hard to make but there are a lot of steps to it. It would work out best if all the prep work was done ahead of time. While assembling the rice there wasn't always time to do prep work. The last step when adding the green onion I also added a bit of cooked shrimp. I thought the rice was good and flavorful, but I was not a huge fan of the sausage. Next time I will do shrimp, chicken or beef. I will agree with other reviews, cold rice is a must!! I have used hot in the past and that's when it gets mushy.

White Chocolate Fruit Tart

I was excited about making this, and I must say I was not let down. It was a big hit, everyone really enjoyed it. I made the crust as the directions say. Then as a review had suggested I put a small thin layer of semi sweet chocolate on the crust. Then I added the filling as directed and then the fruit on top. I used blackberries, raspberries, strawberries, kiwi and canned mandarin oranges. I made the glaze but I used the juice from the mandarin oranges because I did not use the canned pineapple. I did not use all the glaze because it looked like a lot and some of the photos the glaze looked heavy. I had extra fruit so I put all my fruit in a bag with the extra glaze and have been munching on that for the lat couple of days. This is an easy recipe, it can just take time because of all the steps and needing to cool in between. The only problem I had with the tart is that I thought that the filling was not set/hard enough. It should have been I had it in the fridge for 8 hours before serving it. Although I thought it was going to be stiffer I must say it is not going to be a deuturnat to making it again. I will defiantly be making this again, it was already requested again while we were eating it.

Yummy! These were a big hit, my picky husband went back for seconds and then more the next day. I followed the directions with one exception I used spaghetti sauce instead of bbq sauce. I am just not a fan of bbq sauce. I thought these were delicious and they were easy to make. Will defiantly be making again.

Mmm-Mmm Better Brownies

These brownies were good so I will give them a 4, but really it should be lower, I don't feel as though they lived up to their name. I followed the directions (including using butter and not oil), but made a couple additions. I added some chocolate chips to the batter and then some more chocolate chips and walnuts to the top. Like I said they were good brownies but they were cake like. They were not ooey and gooey and that was a huge disappointment. I also must agree with a different reviewer when they said that there was not a lot of chocolate taste to them (reading I thought they were crazy, but they were right). If it wasn't for the chocolate chips there wouldn't have been too much chocolate flavor. Not the ooey gooey brownie I was looking for but going to keep the recipe around, who knows when I want a cake like brownie this will be the one I will turn to.

Earthquake Cookies

I made this with a lemon cake mix. It was quick and easy to make. I found that I had a lot of powdered sugar left over. Next time I will defiantly roll heavier in powdered sugar, they needed it. Everyone enjoyed, will make again and will try different types of cake mixes.

Good Old Fashioned Pancakes

Sorry, I really did not think these pancakes were anything special. I was hoping they would be big and fluffy and they ended up being pretty thin. I followed the recipe and a couple suggestions like letting the batter sit for a few minutes and not stirring the batter after that. They were not bad but for the effort and ingredients needed I will probably use a mix next time.

Blueberry Strata

I hate it when people tweak and change recipes the first time they make it and then review it because they are reviewing something different, but in this case I am guilty. I made the strata following the directions but I used strawberries instead of blueberries (I had intended on using the blueberries but they were so expensive and strawberries were on sale). I know it is a major change but it was delicious!! Made it for Easter brunch and everyone loved it. They said it was so good they could not imagine it with blueberries. I will make it again, and I will try the blueberries. Blueberries would be less work because you wouldn't have to do any cutting. I think this is a great recipe and easy to make. Also, I did add a little bit of cinnamon to the milk/egg mix. Vanilla or little sugar to the mix would be good too. I love how you mix everything the night before then before you serve you make the syrup. Will make again.

Award Winning Soft Chocolate Chip Cookies

Cookies were good and pretty easy to make. The recipe is huge and makes a lot of cookies, was going to make a 1/2 batch but figured I would just freeze the extras instead. The cookies ended up being good and they were soft and fluffy. Got nothing but positive reviews from the family. This one is a keeper.

Eileen's Meatloaf

This was not only the first meatloaf I ever made but the first meatloaf I ever ate. I thought it was okay, I honestly don't have anything to compare it too. My husband loved it. Had seconds (which is rare for him) and ate it for breakfast too. I followed the recipe as is and it turned out great. My husband did find that a little bit of ketchup on it was the kicker. I will be making this again.

Sarah's Rice Pilaf

Easy to make and delicious. The key is to cook the orzo and rice till it gets brown, then add water and other ingredients. Browning the orzo and rice gives it a deep nutty flavor. Made this multiple times tried with/without garlic or onion. Also use vegetable bullion because my daughter is a vegetarian. Always comes out great and easy to make.
