Wow, these pancakes and fluffy and taste great even though I made them wheat-free, gluten-free, & dairy-free!! Instead of using 1cup flour, I substituted 3/4 cup of white rice flour, 1/4 cup of potato starch, 1/4 tsp of guar gum, and 1/4 tsp. vanilla extract. I used plain rice milk instead of milk. I used 2 tbsp. vegetable oil instead of shortening as per other people's reviews. I hope these alterations to the recipe help others who have a similar restricive diet. Thanks for the recipe :)
