Buttery Corn Bread

Reviewed: Nov. 30, 2010
I also added a big squirt of honey to the batter and baked it in a 9x9 pan for 45-50 minutes. After 30 minutes of baking I checked often to make sure it didn't over bake. This is by far the best corn bread recipe ever! It's moist like cake.

White Chocolate Raspberry Cheesecake

Reviewed: Oct. 24, 2010
Great flavor. The texture was on the soft side (vs NY style cheesecake).

Chicken Pot Pie IX

Reviewed: Sep. 19, 2010
I made 2 individual servings in oven safe cereal bowls using the original ingredient amounts except just 1/2 lbs chicken and one pie crust. Egg white wash over the crust and baked at 400 for 12 minutes. Moist and perfect and super easy!

Pork Chile Rojo (Pulled Pork with Red Chile Sauce)

Reviewed: Aug. 19, 2010
Added cumin. Didn't do bag or water. Just put everything in the crock pot and the meat was so tender. Served as shredded pork tacos w/ warm corn tortillas and garnished with cilantro, cojita cheese, and radish slices. Very authentic in flavor and super easy to make.

One-Dish Rockfish

Reviewed: Aug. 10, 2010
I used chard instead of spinach and it turn out great. There was a lot of liquid in the pan, but I just used a slotted spatula to scoop everything out. Super easy meal that I'd definitely make again.

Beet Bundt Cake

Reviewed: Aug. 9, 2010
I only had 3 beets which equaled 1 cup after pureeing, so I added 1 cup of zucchini. Still moist and delicious, but I couldn't taste any beet flavor. Next time I'm following the recipe exactly.

Unbelievable Spinach Calzones

Reviewed: Apr. 13, 2009
Filling was delicious! Dough was very bland. Maybe next time I'll sprinkle salt and parmesan cheeese on top before baking it.

Joey's Peanut Butter Cookies

Reviewed: Apr. 4, 2009
Great flavor. Soft cookie that turned out more "dry" than moist and chewy. I used an insulated pan and it took 14 min to bake.

Spinach and Rice (Spanakorizo)

Reviewed: Dec. 14, 2008
I used 1 Tbs tomato paste instead of tomato sauce and chicken stock in place of water. I also topped with feta and lemon. Great flavor!

Baked Apple Oatmeal

Reviewed: Nov. 30, 2008
I halved the recipe and baked it for 30 min. It didn't look very appetizing, so I probably wouldn't serve it to company. The flavor was good, but the dish was on the dry side. I served it in bowls with milk poured over it (like cereal). It was pretty good that way. I would probably make this again, but maybe not cook it as long or add more milk.

Slow Cooker Turkey Breast

Reviewed: Nov. 27, 2008
I had a 4 lbs bone-in breast and it came out on the dry side... overcooked. I should have relied on my meat thermometer instead of the clock to tell me when it was done. I'm going to try this again, but will check on it earlier next time.

Baked Spaghetti Squash Lasagna Style

Reviewed: Nov. 2, 2008
This is a great base recipe. I baked the lasagna in a dish instead of in the squash shell. I used jarred tomato sauce and Italian seasoned ground turkey. I was surprised at how good this was. It was so yummy!

Figs and Toasted Almonds Brie

Reviewed: Oct. 18, 2008
YUM! Also great with goat cheese, if you don't have brie. I made both side by side and the goat cheese seemed a little sweeter.

Sausage Hash With Apples & Sage

Reviewed: Sep. 6, 2008
Yummy! I omitted the sage & parsley and added fresh basil instead. I also put an egg (over easy) on top of each serving. The runny yolk added an extra depth of flavor to this already tasty dish. Thanks for sharing this recipe!

Big Soft Ginger Cookies

Reviewed: Sep. 1, 2008
Fabulous recipe! I took the advice from others and substituted orange juice in place of water and put the mix in the fridge for a half an hour for easy handling. The OJ had a subtle flavor and surprisingly brought out the ginger. Very easy! I will make this again.
