About this Cook
I love to cook but finding time to do it right isn't easy. My husband and I work nights and rarely get to eat together, but that's not stopping us from cooking healthfully and avoiding processed foods. I am always searching for one-dish recipes that pack up well into lunchbox leftovers we can take to work.
My favorite things to cook
I love to try new Asian and Middle Eastern recipes and anything spicy. I'm always looking for new ways to sneak in whole grains and fresh produce into everything we eat. My favorite dishes to cook only use one pot.
My favorite family cooking traditions
My mom can cook anything in a cast iron skillet, anything! I have never had fried chicken as good as hers in my entire life.
My cooking triumphs
I recently got to host our family's Thanksgiving dinner and I have to admit I did a great job thanks to this website. The apple pie I made was so good that I'm still hearing about it from my in-laws!
My cooking tragedies
Most of my cooking tragedies involve rice being either undercooked or burned. To remedy the problem I've invested good money in rice cookers but they always break on me.

Pesto Chicken Florentine
This was very good and is already becoming a staple at our house. I used the 0.9 oz. Knorr alfredo mix because I couldn't find any others at our grocery store and it still turned out great. I recommend using more spinach - this is a great recipe for sneaking it in for picky eaters.

Corn Chowder with Sausage
This was good. I'll probably make it again but add more vegetables and find a different meat. The sausage flavor was a little strange.

Whole Wheat and Honey Pizza Dough
This was very easy to make but we didn't care for the taste or texture. I was expecting a thin crust but it was actually pretty thick - about half an inch for a 12-inch round. The wheat flavor was very robust and really overpowered the flavors of the toppings. The recommended cooking time is way off. We ended up cooking the crust alone for 10 minutes, then with the toppings for another 20 minutes. The dough would have been raw if only cooked for 5-10 minutes.
