Roasted Vegetable Orzo

This is a fabulous recipe! I make this almost every week. It is a delicious way to serve vegetables. I drizzle balsamic vinegar over the veggies instead of using the olive oil/sugar mixture. Once the veggies are roasted, I mix them in with the cooked orzo pasta and add some fresh chopped basil for extra flavor! This goes well with a simple lemon chicken or even a cajun chicken (something with a little spice to compliment the mildness of this dish). This dish looks very "gourmet like" so this is a great recipe if you are making a dinner to impress!

Spicy Garlic Lime Chicken

This is one of my favorite dishes! I ALWAYS cut the chicken breasts into small, bite size pieces and toss them into the spice mixture. This just gives each little bite A LOT of flavor. I am not a fan of lime juice, so I use lemon juice instead. If you add some chicken broth and cornstarch to the pan after the chicken is cooked, you will get a nice creamy sauce. This is FANTASTIC served over brown or wild rice. I make this often, and always receive a lot of compliments. Thank you for this recipe!

Cream of Chicken with Wild Rice Soup

This soup is WONDERFUL! I always get so many compliments on this recipe. To make it a million times easier (and tastier in my opinion), I sub shredded rotisierre chicken in. I also use 7 cups of store bought chicken broth instead of the 7 cups of water. I omit the white wine at the end. This is a sure crowd pleaser!

Pizza Dough I

This is quick, easy, and very tasty! I have used this recipe for pizza dough, as well as breadsticks and both turn out fantastic! I brush with a melted butter/garlic powder mixture as soon as it comes out of the oven! YUMMM!

Meatball Nirvana

These are very good! I used fresh, minced garlic instead of garlic salt. I add extra hot pepper sauce as I like my meatballs with a kick. The flavors all blend nicely together and cook perfectly at the suggested time/temperature. Make sure to take the meatballs out half way through baking and flip them so that both sides brown.

Rice Cereal Energy Bars

These turned out good! I use honey instead of corn syrup, and a flavored protein powder instead of powdered milk. The great thing about this recipe is that it can be customized to your own liking! There are a lot of ingredients that can be switched out for different ones. This is MUCH cheaper than buying energy bars at the store. I will definitely be making these again!

Asian Orange Chicken

I have to say this is one of my favorite Asian dishes that I have ever made. I added a little bit more red pepper flakes than called for. I always like to tone down sweet recipes with a little added spice! I also cut the brown sugar to about 1/3 cup and the chicken still turned out very sweet! This chicken goes EXTREMELY well with fried rice and broccoli. The sweetness of the chicken really compliments the saltiness of fried rice. Overall, great dish! I will definitely be making this again.

Sweet, Sticky and Spicy Chicken

This is a fabulous recipe! I recommend doubling or tripling the sauce recipe. I also coat the chicken in flour and a little bit of paprika before cooking it to help thicken the sauce. I use a red chili sauce instead of hot sauce to add to the flavor a little bit. I saute chopped celery and carrots in a little bit of olive oil and add to the chicken and sauce. Overall...a big hit in my household! I make this one A LOT as it is requested almost every week!

Blueberry Coffee Cake I

AMAZING!!!!!!! I made some of the changes that other reviewers suggested....2 cups of blueberries (instead of 1 cup) and 3/4 cups of milk (instead of 1/2 cup). Dredge your blueberries in flour and fold into batter before adding to pan. I also drizzle a lemon glaze (mix together 1 cup powdered sugar, 1 1/2 tablespoons lemon juice, 1 tablespoon water) on top of cake after it has cooled. I have made this twice in the last week and it turned out perfect both times. This is good for a breakfast or dessert cake.

Aunt Teen's Creamy Chocolate Fudge

Comes out perfect everytime! I follow this recipe to the letter. I cut the fudge up in small squares and place each square in mini cupcake liners that relate to a season/holiday. I already bought shamrock liners and will be making them for a St. Patrick's Day party!
