To Die For Blueberry Muffins

We did not care for these. We thought they were very bland and there was too much bitterness from the blueberries. Sadly, even the crumble on top was not enough to save them.

Pineapple Upside-Down Cake VII

A nice, simple recipe. I made this for my host family because the father loves pineapple upside down cake. This was my first time ever eating it and although they declared it was amazing, I thought it was okay. Maybe I am just not a pineapple upside down kinda person.

Herb-Stuffed Red Peppers

I was a little nervous when I read this had balsamic vinegar and tomato sauce. The former is very yummy but acidic, and the latter can be, well, a little bland. I was afraid the taste of these two would overpower the spices. WRONG! This is a delicious stuffed pepper recipe. Due to it being February, I used orange peppers instead of red. I also did not have cayenne pepper so I used chili powder and mozzerela cheese instead of parmesan. This recipe was AWESOME! I made it for my host family and everyone loved it. The man of the house even told me I should open my own restaurant! Haha! This is an awesome, versatile recipe with a super unique flavor.

very nice recipe. Mine did not come out with a ton of flavor, but they were BEAUTIFUL! A bit labor intensive for something without a huge punch of flavor but certainly something nice to take to a party.

Country Chicken Stew

Oh. Wow. This is by far one of the best stews I have had in my entire LIFE! Very delicious and yummy. I did make some modifications, as I doubled the recipe because this was made for a woman who just had a baby. I used 1 can of cream of chicken soup, 1 can of cream of mushroom soup, 3 cloves of fresh garlic, a red onion, and replaced the water with chicken broth. I did not have potatoes, so I substituted dinner rolls as the starch/bread. I also simmered it for a bit longer, because I like my carrots to melt in your mouth and the onions to be super duper soft as well. Very flavor and yummy. Thanks!

Delicious Black Bean Burritos

Wonderful burritos. I took the suggestions of others nd used cumin and chili powder. I will think about chicken next time. My only qualm was that, for the amount of calories in the cream cheese I was hoping for something that packed just a tad more flavor to make me believe that the calories are worth it, not that this is just an occasional nummy treat

Quick Chicken Peanut Mole with Cilantro Rice

This is a good recipe. Just not a great one. After the initial mole. I modified it by adding 1/4 cup of cocoa, 1/2 cup of peanut butter, 3 tablespoons of sugar, and 1/4 teaspoon of salt. After these additions, it tasted much better but note that it was quite sweet, but had a lovely peanuty chocolate flavor. I want to try it by reducing the amount of sugar a bit and upping the garlic to make it more savory as well.

Soft Chocolate Cookies

I've been looking for something soft and chocolatey to send my boyfriend in Seattle, but since I am in California, it has to go through the mail. What may be soft after it cools might be slightly hard when it reaches him, even if I put bread in the box to keep the cookies from going stale! No more! This is a wonderfully delicious recipe that arrives soft and safe at his doorstep! Thanks! The only thing I changed about this recipe was adding 1/2 tsp of baking POWDER so that the cookies would rise some. AWESOMe and YUMMY!

Chess Cake

So good! Although a word to the wise, as others have said, you won't be able to tell when it is done, so WAIT until the top browns at least a little bit and then let the cake set. The first one I made I made this mistake. However, the second was DIVINE. I took it to class for a project. One of the students begged me for the leftovers. I guess I will just have to make another!

Sour Cream Cupcakes

A good recipe! Yes, you do have to make some changes to add moisture to the cupcakes, but it is not that hard! A tbsp of milk is all you need and they come out lovely and moist. I added some extra vanilla for a bit more of a "punch," and it definitely helped! I topped with chocolate icing and they were quite yummy!

Mexican Wedding Cookies

NUM! Mexican Wedding Cookies are my FAVORITE! I was so happy to find this recipe! It's so simple too! Although I found that instead of rolling the cookies after they cool, it was best to roll them first when they are fresh out of the oven, let them cool completely, and roll them again. It gives them that yummy layer of sugar that is just divine!

Peanut Butter Cup Cookies

Yummy, but VERY rich! I made these for my boyfriend and I am a little afraid he will not like them because he is not into the super sweetness, and neither am I. The cookies themselves are super sweet, as are the peanut butter cups. It is a pure blast of sugar. I had to eat these with a glass of milk or something because they were so rich. This recipe is basically a peanut butter cookie with a Reeses Peanut Butter Cup. I will make this again, but probably for my Grandpa who loves peanut butter cups. Overall, a good and inventive recipe. I followed the advice of freezing the peanut butter cups prior to inserting them in the cookie and it worked very well!

Easy Spaghetti with Tomato Sauce

Yummers! A very good recipe. Four stars because I enjoyed it thoroughly and it had good flavor, but I was hoping for something with more of a robust flavor. Still, it's nice because almost everyone has these ingredients just lying around in their pantry! I will certainly be using this again when I am in a pinch!

Brown Sugar Pie II

FANTASTIC TASTE! ...However, I followed the recipe exactly, cooked the pie for 40 minutes, and let it set... for two hours. It still hadn't hardened up, and here it is the next day and it is still mush. Very tasty, but I am disappointed that it did not turn out, as I need a pie for school.
