D's Famous Salsa

Really great recipe!! I also used Del Monte mexican style stewed tomatoes and increased the cilantro to 1/2 a bunch- no need to snip off leaves- just throw all in the blender. Pour into a quart jar- I have given out as gifts- everyone loves them and I live in TX also. Thanks for a really good and easy recipe!!

Fabulous Cilantro Pesto

Wow! This was really good! The only thing I substituted was pine nuts instead of the other nuts. Also the left overs actually tasted better the next day- I think I will make the pesto again a day ahead of time so the flavors will blend better. Also there is no need to pick the leaves off the cilantro- just wash- squeeze out the water-cut the ends off, then cut in half and add to the blender- I learned that from making Amy's Cilantro Sauce(on this site)so many times.

Nat and Darcy's Amazing Eggplant Lasagna

I should have read the previous reviews and cooked the eggplant first- I followed exactly and the eggplant was not soft- I cooked for another 30 min and it still wasn't soft enough to eat- I'll stick with Eggplant Parmesan.

Pumpkin Pie Cake I

I have made this quite a bit- it is my favorite- however I have found using Libby's pumpkin pie mix and eliminating the sugar and spices is much easier! Here is my version: 1 - 29 oz. can Libby's Pumpkin Pie Mix 4 -beaten eggs 1 - 13 oz. can evaporated milk 1 box of dry yellow cake mix 1 cup melted margarine 1 cup chopped nuts This is truly a 5 star recipe!!

Pizza Pinwheels

These were wonderful! It is much easier to fold up each end to the middle and also seal the ends- and instead of cutting all the way through-just score into 4 pieces and then bake. After taking them out of the oven then cut again all the way through. I also diced the pepperoni as another reviewer suggested and they were fabulous!

Grilled Orange-and-Bourbon Salmon

This is a very good marinade! I marinated a whole half salmon in it for about 8 hours before grilling it and it was fantastic! I also grilled some asparagus and made a ceaser salad with the salmon on top. So-o so good. Next time I will try shrimp and scallops.

Catfish Gumbo

I made this recipe easier by buying frozen Gumbo vegetables that had celery,onions,corn and okra-a nice short cut- tasted great- I also used catfish nuggets and cut them even smaller to cut down on all the slicing and dicing! Very good flavor!

Guinness® Corned Beef

Made this for St. Patrick's Day and it was the best my husband and I ever had!! I let it sit about 30 min. after taking out of the oven so it would be easier to slice- be sure to cut it across the grain for the best slices- we used it in sandwiches. Very tasty!

Dawn's Candied Walnuts

This is a great recipe! I made with walnuts the 1st time and with pecans the next time- both were very good. I put these in 1 pint jars and sold them at a craft sale for $5- I put out samples and everyone who tried them bought them. I also put them on the Cranberry Spinach Salad thats on this site- really great!!

Chicken Jerusalem I

I also used the cream of chicken soup and used 1 Tbl of the ranch dressing( I wasn't sure how many Tbl in a packet- (I have a large jar of the dry ranch dressing) and it was perfect! Thanks Angela

Jamie's Cranberry Spinach Salad

This is great! I added some crumbled blue cheese and substituted Dawn's Candied Walnuts that I made (on this site) for the almonds and it was perfect! I also served it in a 9x13 glass dish so that the nuts and cranberries didn't fall to the bottom. I'm making it again for Christmas!!
