good basic recipe to follow...just add or substitue what have you. I used half a pound of shrimp and3 andouille sausages and about a half cup of l/o chikn..da said it was authentic new orleans flavor. I used the herbs in a cajun mix and the andouille made it work. could've been a litlle juicier

Aunt Mary's Eggplant Balls
Excellent! I served them to my family as Swedish Meatballs and everyone loved the taste and texture. I will definitely make this recipe again with pasta and marinara.
