Quick Chicken Enchiladas

I am so impressed with myself that I actually made not just Mexican food but yummy Mexican food. :) These are great and FAST! I added some things that I just happened to have in the pantry like enchilada sauce and refried beans and we had a yummy dinner. Texan husband liked these too! Updated Mulled Cider

Yummy stuff! Make it just how the recipes states or jazz it up with more of the ingredients and it still is great. The only thing that I do consistently when I make this is I that use apple cider instead of apple juice. I have people ask me to bring this drink for fall and winter parties all the time. It is really that good.

Oaxacan Tacos

WOW! Who knew that these bundles of lightly seasoned steak tacos would be so flavorful! I was doubtful that it would taste so good but I was wrong! I wasn't able to find corn tortillas so I purchased flour instead. I was SCARED of the jalapenos (I DON'T like hot food... rather I can't eat hot food comfortably) but they were fantastic! The lime and cilantro are the keys to the flavor in my opinion and since I love both I added a little extra on my tacos then my husband's. I also couldn't help myself but purchased a 5 layer "Mexican" party dip that had salsa, cheese, sour cream, guacamole and diced tomatoes and added 2 spoonfuls to top off the tacos. Just wonderful! Met and exceeded my requirements for a weekday family meal which are easy to make, YUMMY, and fast to cook! My Texan husband was quite pleased with them so I take that as a sign that these are up to par. :) I definitely will be making this again in the very near future.

Easy Tuna Casserole

This did not last that long from the moment I opened the oven door to the when the last morsel was eaten. Very tasty and easy! I took the recipe and modified it as some of the other reviewers had by adding extra cheese, extra tuna, watching the noodle amount, adding peas and adding a can of cream of mushroom soup. Yummy, yummy! But what really made this meal even better...the French fried onions... Who knew that something so small could make such a difference... MORE FRENCH FRIED ONIONS, PLEASE! That was the phrase of the night!

Baked Dijon Salmon

YUMMMM-EE! Very fast, very easy and very tasty! I had the man at the fish counter slice the skin off of the fillet for me and cut it in to servings so even more time was saved and time is not something I can afford to waste!

Heavenly Potatoes and Ham

I choose this recipe for my family one night because it met a few requirements. One, it was easy. Two, didn't have a lot of ingredients and Three, didn't take a long time to make. I was satisfied. I took all the other suggestions and made my adjustments. Less potatoes cut in small pieces, more soup, more ham, NO SALT! Everyone in the house loved it. LOVED it. My husband asks for it all the time! I like as well but it is a bit salty even with eliminating the salt which is odd but I am the only one in the family that is a salt-aholic. I can't seem to locate a low salt or no salt Cream of Chix soup but I will see if I can find a low salt ham to use instead.

Ultimate Maple Snickerdoodles

I found this recipe just in time for a bridal shower that I was hosted as I was looking for an easy cookie to package as favors. This recipe was my choice as there is no milk used in the batter. One of my guests was milk and corn allergic so I used a soy based, corn absent "butter". VERY EASY to make and no fuss since I was also making a lot of other more complicated dishes. The first test batch I made I thought that I did something wrong as the cookies were so moist on the insides that I had a hard time removing them from the cookie sheet. Each batch afterwards I chilled the dough for an hour or so before baking as I felt without it, it would be a bit to sticky for me to get a dollop off my fingers and onto the tray! This, I feel helped out greatly and I realized that the joy of this cookie is the slightly chewy middle! This recipe was a HUGE success! Despite the fact that only one person at the shower had ever heard of a Snickerdoodle, more than half the guests have requested this recipe even with the soy products that I used! Just Yummy, pure yummy!!
