Chicken with Almond and Berry Relish

I've been looking for main dish recipies that contain fruit, as it is a nice change from meat-and-veg recipies. This is absolutely delicious, and the kids especially love the fruit. As always, I was looking for recipies at 5 pm, so instead of marinating the chicken, I just baked it drizzled in olive oil and s&p, then added the relish & almonds right before serving. I also toasted the almonds while the chicken was baking.

Creamy Beef Casserole

Oh, yeah! If your kids like casseroles, but not tomato sauce, this is for you! I used only one pound of beef and thought it was plenty beefy. I substituted a can of green chiles for the pimentoes. By the way, the grown-ups will love it too!

Supreme Strawberry Topping

If you want to use this as a filling between cake layers, cut all the strawberries in quarters before cooking. Fabulous!

Chocolate Pecan Pie III
