Lentils And Spinach

Reviewed: Oct. 14, 2011
Deeee-lish!! This was so tasty! Both my husband and I kept saying mmmm after every other bite! I only made a couple changes/add's... I Added a cup of diced HAM! I bought a ham steak with the bone in it. I diced the ham and set it aside, except I put the leftover BONE in with the lentils while they simmered. I threw the ham in during the last five minutes of simmering. I also added 2 stalks of celery fined chopped for flavor. I then diced up a couple of fresh tomatoes and sliced a couple of green onions and sprinkled them on top as a FRESH garnish. YUM! I served the whole thing over whole-grain rice. I can't wait to make this again!! Oh! I also used FRESH spinach. I just tossed it in during the last minute of simmering. Thank you for this DELICIOUS Recipe!!!

Zucchini Cakes

Reviewed: Sep. 22, 2011
This gets my 5 starz for EASE!! I really LOVE crab cakes but they are SO time consuming! This is so fast and EASY! TASTE? tho... really nice, but does not taste crab cake enough for me... So I kept it simple and CHEAP by adding 1 container of Starkist REAL crab meat! It's in a small plastic tub in the refrigerated section, by the imitation seafood's. I added one container and it flavored the whole batch! My husband thought they were completely crab cakes! WONDERFUL and EASY recipe! Thanks for sharing!!! PS.. MAKE SURE YOU DRAIN/PRESS the water from the zucchini first! Makes a HUGE difference!

Spicy Spaghetti Squash

Reviewed: Jun. 23, 2011
KEEPER for sure!! Thanks for the FABULOUS recipe! AMAZING wonderful FLAVOR and sooo simple! My husband and I couldn't stop eating this!! TWEAK:... I don't like to open a bottle of wine when a recipe only calls for 2tblspns... so I substituted the wine with 2 tblspns of cooking sherry... perfect! Also, I added a dab of butter to the squash before putting the sauce on and I added 2 tblspns of SUGAR to the sauce while it was simmering. SUGAR cuts the acid in a tomato sauce. I can't wait to make this again! It's our new fave!! Also... DRY oregano is just fine if you don't have fresh. YUM!!!
