October Oatmeal Pumpkin Muffins

I have gall bladder problems and was looking for something low fat to make for the holidays. This recipe has no oil! And the muffins are soft and moist. Very delicious.

Cupcake Surprise

I've been searching for a recipe my grandma used to make and this is pretty darn close. She used the foil mini cups instead of full size. I think her end result is more like a brownie than cake. So call your grandma before she dies, don't wait like I did! Anyway, I used a can of cherry pie filling instead of the maraschino cherries. I just put half a cherry with some goo on top of the cream cheese mix before baking. I also used dark chocolate chips because IMHO they are the only kind! You do have to be careful about filling these too full, the cake mix overwhelmed a few of these. My grandmas were always level with the top of the foil cup. She was a very careful chef! One recipe made many more than 48 minicupcakes. Oh, and I also tried the new Yogurt/cream cheese mix...tasted too much like yogurt. Second batch I used 1/3 less fat cc and it was great. Susan

Cranberry Chicken II

I made this with leftover thanksgiving turkey...the turkey shredded up a bit and became more like hash, but it got 4 thumbs up from my family and I got to eat all the leftovers. It was great on top of mashed potatos and stuffing.

Honey Vanilla Cheesecake with Gingersnap Crust

We did not care for the flavor of this cheesecake...it was very caramel flavored. Which if you wanted caramel flavored, it would be very good!!!! We made a plain crust instead of gingerbread. I think the caramelish flavor would be a lot better with gingerbread for a winter treat. Did not taste good with blueberry topping. We also learned not to try to bake a cheesecake on pizza night...not compatible in the oven. This was a somewhat complicated recipe. I would not do this again. But I cannot fault the recipe itself. We did not read carefully enough before we started.

Parmesan-Herb Almonds

I liked the concept and the flavors. For some reason these didn't get crunchy. Ended up putting them back in the toaster oven to crisp them up.

Apple Pie Filling

This was great, but I did end up with about 2 cups of liquid apple starchy goo that wouldn't fit into the pie, so water/cornstarch could be seriously reduced. I've been using the goo to make oatmeal. I also had trouble with the baking...first it was frozen in the middle, then over cooked. I'll have to experiment some next time. I also prefer to thicken my pie with flour instead of cornstarch, but that is easy enough to fix.

Taco Potato Shells

I made this with one can of Italian seasoned diced tomatoes and mozzarella instead! I also put a can of beans in and less ground beef. (that would have been better with the taco flavor. Anyway, we all liked it. My daughter made peas to go with it. To make it faster I baked the potatoes in the microwave...but don't over cook...mine were a little mushy.

White Chili with Ground Turkey

Loved it! I put half a cup of rice into the broth. I used a 7 oz can of Salsa Verde instead of the chiles. Because the salsa added it's own seasoning, I reduced the spices a bit. 1 tsp cumin, 1tsp oregano, 1/2 tsp Cinnamon, dash of white pepper, dash of paprika, One can only of cannellini beans, plus one can of cream of chicken soup, AND to boost the nutritional value I added one can of diced tomatos. Caution: This was plenty salty, so if you could use unsalted soup or beans or tomatos, it would be good.

Fiesta Chicken and Rice Bake

Thumbs up! We loved this and it was soooo easy. I used ground turkey (cheaper) and brown rice. Based on other reviews, I precooked the brown rice. Fabulous!

Quinoa and Vegetable Soup

I had some leftover quinoa to use in this. It was really good! As with most soups, it was better the second day. I put in a little salt...maybe half a teaspoon. Canned tomatos and beans vary in the amount of salt they contribute so sometimes you just need a little extra.
