Fresh Apple Cake II

This was good but 45 minutes was too long in a glass 9x13. I should have checked it sooner but I'm guessing it was probably done closer to 30 mins. If you reduce the sugar, add more spices.

Best Brownies

I was craving the kind of brownies you can make from a box, like Pillsbury. Dark, moist, chewy, chocolatey with that papery thin layer on top. These were a lighter color, crusty around the edges and crumbly/cakey in the center, stuck to the pan, and had a thick hard layer on top that cracked and crumbled when trying to cut them. This was not at all what I was craving.

I used quick oats and the Pampered Chef 1.5" cookie scoop. Baking time was 10 minutes. The second batch I tried with steel cut oats, but that didn't work, so I'll stick with quick or rolled oats.

Chicken and Biscuit Casserole

Delicious! I added diced potatoes, increased the vegetables and used less broth. I think this would also be easy to make in a crock pot except I'm not sure how you'd do the biscuits, maybe just add them at the end or cook them separately and drop them in.

Gourmet Cream of Broccoli Soup

Delicious! I used 2 large potatoes to make it more potato-y. I also pureed in my Cuisinart food processor rather than the blender. This soup is good by itself but could also be enhanced with chunks of ham, cheddar cheese, etc.

Lighter Banana Muffins

Delicious, quick and easy to make. I substituted whole wheat flour for 1 cup of the flour and I added 1/2 cup applesauce and some allspice. They didn't stick to the muffin pan and they are very good warm.

Irish Potato Farls

These potato pancakes don't have any flavor. I tried making them in a pan with flour, then I tried frying some of them in oil. The fried ones had a little flavor, but overall they were really blah.

Lemon Poppy Seed Loaf

Very tasty. I made 24 mini muffins with this recipe by dividing it by 3. Instead of butter I used half margarine and half applesauce. Instead of measuring the lemon juice and zest, I zested one lemon and used all of its juice. Instead of yogurt I used light sour cream. I used 2 tablespoons of poppy seeds. I used the Pampered Chef Mini-Muffin pan so I decreased the oven temp to 325 and baked for 25-30 minutes. The tops of the muffins came out light while edges that were touching the pan came out dark.

Banana Sour Cream Bread

I added 1 tsp of allspice to add more flavor. I also substituted whole wheat flour for the half of the flour and added 3/4 cup of water because whole wheat flour makes the batter so thick. The cinnamon/sugar pan coating sounds good in theory, but in reality the sugar carmelizes and makes the bread stick to the pan. I made one 9x5 loaf and 12 large muffins. My boyfriend said "they're good" and ate 2.

Quick and Easy Chicken

I absolutely loved this recipe! My husband doesn't like foods that are sweet, so it wasn't something he'd eat again. But I think he might not have liked it because he hates soy sauce. I didn't tell him it had soy sauce in it or he wouldn't have eaten it at all ;)

Cheesy Green Bean Dish

Maybe this is a great recipe if you use frozen green beans, but I think it's practically inedible! A friend of mine picked green beans from her garden so I wanted to find a good side dish recipe. The cheesy sauce is wonderful, but the beans are like leather, impossible to chew. I don't know if they got that way from being baked in the oven or if they were too ripe, not ripe enough, etc. At least the rest of it tastes good!

Pizza Dough I

I made pizza tonight using this recipe for the dough. I used yeast, flour, sugar, salt, olive oil, water, shredded italian cheese, and pizza sauce. I can buy generic frozen pizzas at the grocery store for $3.99, but this tasted fresher than a frozen pizza and wasn't dripping with grease like delivery. Plus I can customize it with my favorite veggie toppings next time. I used a cookie sheet because I didn't have a fancy pizza stone. I baked for about 45 minutes. Next time I make this pizza, I have to flatten the dough more. It grows, but it doesn't grow out, it just grows up! It was a little crunchy on the outside, which was good, but a little too doughy on the inside, most likely because I didn't flatten it enough. Peanut Butter Cookies IV

These cookies were so soft, some of them fell apart when I put them on the cooling rack. But that's ok because I love soft cookies! However, I did not get 4 dozen cookies from this recipe. I didn't eat any of the dough and got 27 cookies that were not large.
