Amaretto Creme on Fresh Fruit

Great sauce w/ berries! However, I think it would be better to eliminate thickener (flour) and use evaporated milk to achieve creamy consistency.

Rosemary Roasted Turkey

I have never gotten as many compliments as I did with this recipe. Turkey was moist and flavorful. You can't go wrong; even if it is your first time cooking a turkey.

Elegant Turkey Stuffing

this recipe was a TOTAL success! The orange liqueur flavoring really made it special. Some reviewers recommended reducing the amount of liqueur--I followed it to the letter and would encourage everybody else to do the same.

Blackened Salmon Fillets

OUTSTANDING! Spice mix is excellent. I think the amount of butter called for in this recipe is needed for speedy "blackening". Also, turning vent fan on as soon as you start cooking cuts down on smokiness. Next time I will do this in the burner of my outdoor BBQ. Try this recipe and you will be a hit.

Asian Salmon

Very delicious and elegant. Sauce/marinade is outstanding. I used lite soy sauce. Sesame oil definitely makes it special. Next time I might use a few sesame seeds for garnish. Will definitely make this again. Especially good to try on people that don't particularly care for salmon. I will also try marinade w/ shrimp as a reviewer suggested, and I'm also tempted to try it on chicken. Will let you know how that turns out.

Chicken Tortilla Soup I

this soup is great! like most people, i skipped the hominy and it didn't seem to matter. One time I also replaced chicken w/ leftover beef fajita and it was great. do try this one if you want lots of compliments.

Cheesy Potato Casserole

i was so dissapointed w/ this recipe. I was trying to get away from making the usual mashed potatoes for the holiday but this wasn't a good choice. the potatoes were mushy, the mayo overpower the cheese taste. This will not do.

Broccoli-Cauliflower Salad

great version of this salad. no wonder it has a 5-star rating. I added finely chopped green peppers and green olives to counter sweet dressing. next time I think I will reduce mayo/sugar by 1/2.

Apple Butter Pork Loin

I was so excited about this recipe. It had strong ingredients to counter the blandness of lean meats, such as pork tenderloin. But, what a dissapointment! Per other reviews, I cooked @ 325, 1/2 hr per lb and it came out moist & tender, but FLAVORLESS, despite wonderful ingredients. The best part of this recipe was eating the apple butter out the jar, during preparation.

Garlic Prime Rib

Sugar Coated Pecans

Like others, I added vanilla to egg white wash and used 1/2 brown and 1/2 white sugar. This recipe was a complete success! But I do not recommend using baggies for coating w/ sugar. I did and not realizing my bag was only partially closed, I had sugar flying all over the kitchen when I started shaking. What a mess! Had to do a 2nd batch and used a large salad bowl instead. Had no trouble w/ this method and much neater!

Orange Chocolate Chip Cookies

I was so dissapointed in this recipe. I could barely taste the orange. On the first batch I followed the recipe faithfully. Thought it had too many c chips and no orange. Just a beefed up choc chip cookie. On the 2nd batch I added an extra 1 tsp of orange zest and 1 tbsp of orange extract and reduced c chips & pecans by 1/3. Still couldn't really taste the orange. Recipes with orange or any other citrus flavoring are so tricky. Too little, no flavor, too much, bitter. This recipe might work if you used choc chips infused with orange flavoring/liquor, but I won't bother to experiment.

Best Ever Banana Bread

I was skeptical when I read "Best Ever" recipe. Who would've thought a basic bread could be made into such a wonderful creation! I used banana yogurt instead of buttermilk. I used the oil but will try again with cinnamon flavored applesauce, just to see what happens. Also used 3/4 c. white and 3/4 c. brown sugar. I also added 1 tsp. vanilla and I truly think this adds an unexpected zing to this recipe. My family went crazy for it, didn't last very long at all. I highly recommend that you try it. The only little piece that is left is still moist, 3 days after making this recipe. One final thought, following the recipe to the letter will yield excellent results but what is also wonderful is that you can tweak it and it will still be "Best Ever".

Southwestern Turkey Casserole

tasty and easy. I have a simpler version: Mix all ingredients except tortillas & cheese. In lightly greased pan, layer tortilla strips, mixture and cheese. repeat. If you can eat mild jalapenos, then you will enjoy this casserole comfortably. Do not overcook as cheese/tortillas will get chewey. Can sub turkey w/ cooked chicken, pork, fajita meat, gound beef.

Chipotle Crusted Pork Tenderloin

Tasty and a different way to cook this meat. I used a 5 lb center cut loin so doubled the ingredients. Then baked til 160 degrees. I will fix this again but will reduce chipotle by 1/3. I think the leftover loin would be great for making enchiladas or other SW or Tex-Mex fare, or even Thai.

Outstanding! Rolling into walnut sized balls will result in regular sized cookies, if rolled bigger, they won't fit in cookie jar, lol. Again, these are heavenly!

Grilled Tuna Steaks with Grape and Caper Salsa

wow! this is a keeper. I followed the recipe faithfully and I'm glad I did. Important to half the grapes, otherwise kinda hard to eat whole grapes using fork. I grilled our tuna, but I can see using any kind of white fish, either grilled or pan fried. EXCELLENT!!!!

Beer-Boiled Shrimp

I adjusted the recipe for 2 people. It was hard for me to melt a whole stick of butter just for the two of us but I also believe in following recipes to the letter (at least the first time) so did it anyway. This recipe is quite delicious and a welcome change if you want something other than dipping shrimp in cocktail sauce. I have saved leftover butter/beer sauce and will use it tonight w/ linguini. I am not sure whether it would taste as good w/ butter substitute. I look forward to reading future reviews from those who tried a lower calorie alternative. I should have rated it 5 stars for yumminess but gave it 4 stars b/c I still feel guilty about all that butter, lol. yikes! I just looked at the cal/serving and it exceeds 1,000--fat grams are thru the roof also. Won't indulge in this again despite it being absolutely delicious.

Cheesy Baked Potatoes

I followed this recipe to the letter and it was great! If I were REALLY dedicated, I would put the potato mix in a pastry bag and fill the potato shell using a fancy tip. But not necessary, this recipe is excellent w/o the fancy/schmanzy fussing. I had to wrap the potato shells w/ foil b/c I tore them when I was scooping them out. I removed the foil at serving time.
