Easy Mint Chocolate Chip Ice Cream

wowzers! The high rating is well deserved. I followed the recipe to the letter, except that I shaved my chocolate. Used my Cuisinart ice cream maker and in the future I will reduce the recipe by 25% as it spilled over a bit.

Fresh Fig Cake

For sauce, mash rather than chop figs otherwise too lumpy. Like many, my cakes were dense (see pic) but it tasted good. So I cut my cakes in squares and drizzled w/ fig sauce. It really tastes like fig newtons. I will make it again b/c I have a fig tree and there doesn't seem to be too many other fresh figs recipes around, but I don't rate it 5 stars b/ too many elements might affect how this cake comes out, i.e. fig ripeness, using butter vs oil in batter, etc.

Pan-Fried Mustard Mayonnaise Tilapia

It was so nice to have fish w/ a different flavor, in this case, mustard, which was predominant. I usually prepare fish using some king of citrus, so the mustard was a very welcome change. I found the mix of mayo/mustard to be an excellent way to get a thick panko coating. Very easy recipe. Might try using fish other than tillapia or even chicken breast, sliced or pounded so it cooks quickly when pan fried.

Best Cream Of Broccoli Soup

Oh sublime yumminess! Would give it 10 stars. What I will do different next time (yes, there WILL be more times): I will steam the broccoli in the chicken broth so it gets tender quicker. For the roux I used whole wheat flower b/c that is what I had and 1/2 almond milk and 1/2 reg. milk b/c, again, that is all I had. Did not seem to affect the recipe so I may just use all almond milk in the future. I used my immersion blender rather than mess w/ reg. blender. I cannot live w/o this hand appliance.

Peach Upside Down Cake I

I made it worse b/c I used whole wheat flour--it is all I had. Used canned peaches and let them dry for about 30 min. I followed the instructions to the letter, including bake time. It tasted OK, but it reminded me of a fancy pancake (wheat flour) rather than a cake. With butter being almost $5/lb, I won't spend any more time or effort on this recipe. I took a pic and it is nice--nicer than it tastes.

Peachy Bread Pudding with Caramel Sauce

the best ever! followed to the letter, except I used 2 16 oz cans o peaches, minus juice. I used store brand of condensed milk and I thought it was a tad thin, thus making the pudding a little runny. Next time I will use a national brand of condensed milk and add some pecans. The sauce was indeed out of this world good. This tasted every bit as good as the bread pudding at Babins, a popular restaurant in Houston area.

Orange Drop Cookies IV

did not like these at all! too cakey. I almost felt like I was eating muffin tops rather than cookies. I gave it 1 star because cookies were "orangey" but this is not a recipe I will ever try again (unless I'm in the mood for muffin tops).

Rosemary Red Potatoes

I folowed many posters' advice to boil 10 min before baking and I'm very glad I did. Excellent recipe. I used fresh rosemary from my garden and perhaps a wee bit more garlic than recipe called for

Crostini with Mozzarella and Tomato

Uninspired by this recipe. Calls for too much cheese which overpowers other flavors. Needs enhancements as other posters recommend, ie. balsamic vinegar.

Smashed Cauliflower

I thought this recipe was absolutely delicious! However, like so many have posted, it tends to be runny. After reading the various reviews, I made it a point to drain all of the broth but it was still kinda runny. I added 1/2 c. of low cal cream cheese and that improved the consistency somewhat. I used an immersion blender and the end result was like a very, very thick sauce, but not like mashed potatoes. I'm wondering if it's not the fact that cauliflower, when fully cooked, retains a lot of liquid. Next time I may cook it to just tender and see of that makes for a thicker consistency. The flavor was phenomenal.

Peach Pie

We loved this pie. However, it was runny so it was more like a cobbler than a pie. I used 1/2 c. white and 1/2 c. brown sugar as some recommneded. I also let pie sit in the oven past bake time. Still runny. What I might do next time is bake at higher temperature for a bit longer, and protect pastry w/ foil so it doesn't burn. All in all, it was delicious.

The Best Mint Chocolate Cookies

I didn't get why you needed some white and some wheat flour, nor did I get the importance of powdered milk but regardless, I really liked this recipe. I used 2 eggs instead of one and 1/2 c. oil instead of 1 c., as many reviewers said they did. I also used mint choc chips. These were hard to find, I was told stores usually stock up during holidays but not year round. I got extra packs of the chips b/c I will be making this recipe again. Highly recommend.

Cheesy Baked Potatoes

I followed this recipe to the letter and it was great! If I were REALLY dedicated, I would put the potato mix in a pastry bag and fill the potato shell using a fancy tip. But not necessary, this recipe is excellent w/o the fancy/schmanzy fussing. I had to wrap the potato shells w/ foil b/c I tore them when I was scooping them out. I removed the foil at serving time.

Beer-Boiled Shrimp

I adjusted the recipe for 2 people. It was hard for me to melt a whole stick of butter just for the two of us but I also believe in following recipes to the letter (at least the first time) so did it anyway. This recipe is quite delicious and a welcome change if you want something other than dipping shrimp in cocktail sauce. I have saved leftover butter/beer sauce and will use it tonight w/ linguini. I am not sure whether it would taste as good w/ butter substitute. I look forward to reading future reviews from those who tried a lower calorie alternative. I should have rated it 5 stars for yumminess but gave it 4 stars b/c I still feel guilty about all that butter, lol. yikes! I just looked at the cal/serving and it exceeds 1,000--fat grams are thru the roof also. Won't indulge in this again despite it being absolutely delicious.

Grilled Tuna Steaks with Grape and Caper Salsa

wow! this is a keeper. I followed the recipe faithfully and I'm glad I did. Important to half the grapes, otherwise kinda hard to eat whole grapes using fork. I grilled our tuna, but I can see using any kind of white fish, either grilled or pan fried. EXCELLENT!!!!

Outstanding! Rolling into walnut sized balls will result in regular sized cookies, if rolled bigger, they won't fit in cookie jar, lol. Again, these are heavenly!

Chipotle Crusted Pork Tenderloin

Tasty and a different way to cook this meat. I used a 5 lb center cut loin so doubled the ingredients. Then baked til 160 degrees. I will fix this again but will reduce chipotle by 1/3. I think the leftover loin would be great for making enchiladas or other SW or Tex-Mex fare, or even Thai.

Southwestern Turkey Casserole

tasty and easy. I have a simpler version: Mix all ingredients except tortillas & cheese. In lightly greased pan, layer tortilla strips, mixture and cheese. repeat. If you can eat mild jalapenos, then you will enjoy this casserole comfortably. Do not overcook as cheese/tortillas will get chewey. Can sub turkey w/ cooked chicken, pork, fajita meat, gound beef.

Best Ever Banana Bread

I was skeptical when I read "Best Ever" recipe. Who would've thought a basic bread could be made into such a wonderful creation! I used banana yogurt instead of buttermilk. I used the oil but will try again with cinnamon flavored applesauce, just to see what happens. Also used 3/4 c. white and 3/4 c. brown sugar. I also added 1 tsp. vanilla and I truly think this adds an unexpected zing to this recipe. My family went crazy for it, didn't last very long at all. I highly recommend that you try it. The only little piece that is left is still moist, 3 days after making this recipe. One final thought, following the recipe to the letter will yield excellent results but what is also wonderful is that you can tweak it and it will still be "Best Ever".

Orange Chocolate Chip Cookies

I was so dissapointed in this recipe. I could barely taste the orange. On the first batch I followed the recipe faithfully. Thought it had too many c chips and no orange. Just a beefed up choc chip cookie. On the 2nd batch I added an extra 1 tsp of orange zest and 1 tbsp of orange extract and reduced c chips & pecans by 1/3. Still couldn't really taste the orange. Recipes with orange or any other citrus flavoring are so tricky. Too little, no flavor, too much, bitter. This recipe might work if you used choc chips infused with orange flavoring/liquor, but I won't bother to experiment.
