Roasted Red Pepper Vinaigrette

This dressing is fabulous. It was super simple. It looks, smells and tastes wonderful, slightly sharp and tangy. I took it to a potluck and received several compliments (1 from a "red pepper hater"). I also used it instead of mayo on wrap sandwiches - just wonderful.

Sushi Roll

The rice turned out just right with this recipe. The "stuffings" are pretty standard and you can adjust them to taste. Very useful recipe for getting started with sushi. Thanks Adam.

Slow Cooker Scalloped Potatoes with Ham

I've made this several times now. It doesn't seem to turn out in my slow cooker, but 1 1/2 hours at 325 in the oven does quite a nice job instead. I usually add some mushrooms, and I have always been happy with the results. Nice and creamy, very cheesy, freezes well too.

Best Broccoli Casserole

Very good recipe. I used fresh broccoli, and it turned out great. Very creamy, could have used a bit more of the cheese, and maybe a bit less of the soup, but overall really good.

Artichoke Bruschetta

This was quick, easy, and FABULOUS. I used only 1-1 1/2 tbsp of red onion, and added some diced tomato. I must admit I love artichokes, but I can't say enough about this bruschetta. Terrific both warm and cold. Highly recommended!

Kentucky Bourbon Cake

I'm giving this 3 stars only because perhaps I did something wrong, but this just didn't work out well for me. I think it was overcooked, as the outside is VERY hard and can't really be eaten. It is miles short on fruit, although I did add extra. I can hardly taste the alcohol, if at all. The middle is not bad, but overall a major disappointment for all the work, expense, and waiting.

Buckeye Balls II

These are quite good. I would also recommend doubling the chocolate dip. I found them a little too sugary, perhaps I didn't knead the dough long enough. Still, they disappeared at work in no time, and they do make a nice presentation.

Cinnamon-Roasted Almonds

These nuts are a great idea, but the recipe could use some tweaking. I doubled the cinnamon, and I think it helped. They could still use some more flavour though, I think an extract (almond, rum, etc) would be good. Regardless, they still turned out great, I just think they could be better.

Almond Buttercrunch Candy I

I've made this recipe over a dozen times and I'd like to share a few things I've learned. Temperature is critical anytime you work with sugar. The final consistency is almost 100% dependant on the temperature. At 245 you get caramel, at 310 you get toffee. I would not recommend making this without a candy thermometer. Use the thickest pot you can, to prevent scorching. Stir ocassionally until 300 and then not at all until 310. This reduces the time it takes to climb the last 10 degrees and reduces the chance of burning. Remove from heat at precisely 310-do it fast and pour it fast, trust me on that. I don't add the almonds, I like the skor bar quality of the candy without them, and I don't use the bottom layer of chocolate on the pan, I never get good adhesion, it falls off when you try to eat it. I only put chocolate on the top. When the candy hardens enough that your finger only makes a small dent in the top add the chips, give them a minute or 2 to melt and then spread with a knife or the back of a spoon. My chocolate has always stuck when doing it this way. If you need it ready fast put in the fridge or freezer, otherwise it can take a while for the chocolate to harden. For breaking it into pieces I just slam mine against the counter and let it break into odd sized pieces. This candy is always met with excitement when I bring it to a gathering. I hope this helps anyone who wants to make this wonderfully addictive candy

Buried Cherry Cookies

These cookies are excellent! They disppeared very quickly. Make sure you apply the chocolate frosting after the cookie has cooled, or you will not get good chocolate coverage. Other than that, they were very easy and quite impressive looking/tasting.

Awesome Slow Cooker Pot Roast

Awesome is the right word for this. I added mushrooms and garlic, the flavours penetrated the meat and it was fabulous. I would recommend adding some corn starch to the gravy before serving, as it was a bit thin. This recipe was so quick to throw in the cooker, and the results were comfort food at its finest.

Slow Cooker Lasagna

Good results. I cooked it 5hrs on low, and noodles were still a bit firm. Could still use some "tweaking". I added mushrooms to the meat sauce, and spinach to the cheese layer. Worked out well. I would recommend putting in some more flavouring though. I will keep trying this one.

Broccoli Chicken Fettuccini Alfredo

Excellent Recipe. This was a very easy and delicious supper, that looked like it came from a restaurant. I doubled the chicken and sauteed it in garlic butter. I will make this frequently. Thanks Brenda!!

Ham and Pineapple Dinner

Shudderuppers

It sounded really good so I thought I'd try them. They were alright, but I didn't find it much of an improvement over just roasted marshmallows. A bit chewier. The caramel gets VERY hot and the marshmallow is no longer at it's peak of gooey-ness by the time the caramel is ready to eat. Probably not worth the extra effort.

Artichoke Rice Salad

Very good salad. I think it was even better warm than chilled. I halved the mayonnaise and it worked out great. Could have used more curry powder just for a bit more flavour.
