Autumn Peanutty Carrot Cake

Reviewed: Jul. 18, 2002
This cake turned out so well that it was GONE in three days! I'm going to make it a lot now! I sprinkled the leftover peanut butter chips on top of the icing... I recommend this recipe to anyone!

Spinach Cheese Manicotti

Reviewed: Oct. 22, 2010
I didn't use garlic powder, I used four cloves of finely minced garlic and added it to the ricotta mixture. I was concerned the noodles wouldn't get done because it didn't call for them to be boiled first, but they were great! The only thing I would do different next time - saute the onions and garlic in olive oil for a few minutes before adding it to the ricotta mixture. (We told my son that the green stuff was parsley, not spinach, and he fell for it.) For the side I bought a loaf of italian bread, split it lengthwise and laid the loaves crust-side-down on a cookie sheet. Then I "generously" spread softened butter on each loaf, followed by a sprinkling of garlic powder and salt. Baked the bread at 350 for a few minutes, long enough to let the butter get melty, then turned on the broiler. (Thanks Pioneer Woman!)

Buffalo Chicken Dip

Reviewed: Oct. 4, 2008
This is absolutely amazing. I have made it a few times and I prefer it with bleu cheese dressing instead of ranch. But it's excellent either way - I had to use buttermilk ranch this last time and it turned out fantastic! I half the recipe when it's just me and the hubby wanting some munchies for late night TV. GREAT with chicken-in-a-biscuit crackers!!!

Mom's Zucchini Bread

Reviewed: Jul. 28, 2009
Wow!!!! I don't know that I've ever made something so perfect! I took the advice of some other reviewers and made the following changes: Used 1 cup brown sugar and 1 cup of sugar and I added 3 cups of finely shredded zucchini without wringing out the water. This turned out so divine that I'm going to make several more loaves today and give them out! My husband said, "Your zucchini bread is PERFECTION." :)

Lisa's Chocolate Chocolate Chip Cake

Reviewed: Mar. 19, 2006
This cake got RAVE reviews! I am definitely saving this recipe. It's so easy to just throw everything into a bowl and mix it like that! I used a devil's food cake mix and when the cake was finished, I poked holes all over the cake and then poured melted frosting all over it. Then dusted with powdered sugar. Good stuff!

Caramel Shortbread Squares

Reviewed: Nov. 24, 2004
I made the mistake of following the version of this recipe that is in the cookbook. BIG mistake, ruined a whole pan of potential caramel. You only need to boil the caramel for 3 or 4 minutes and stir CONTSTANTLY. Then take it off of the burner and stir it for about two more minutes. This turned out WONDERFULLY. My husband gives it a 10, and he never gives anything a 10.

Peppermint Brittle

Reviewed: Dec. 7, 2006
This was so easy to make and makes SO MUCH! I read some reviews so I tweaked it a little bit by also adding super finely crushed candy cane powder to the top to make it shiny, then I drizzled melted milk chocolate over the top before refrigerating. I will definitely keep this recipe handy for the holidays!

Blueberry Dump Cake

Reviewed: Jul. 23, 2009
This is DELICIOUS and REALLY EASY. Tastes fantastic with whipped cream! I had a bunch of blueberries I needed to use before they went bad and I decided to try this recipe since it was new for me. I did use a little bit more butter and a tiny bit less sugar. I also only had 2 1/2 cups of blueberries and it still turned out fine! Superb, will make again and again!

Banana Muffins II

Reviewed: Aug. 4, 2013
Great recipe. I added one teaspoon of cinnamon and 1/4 tsp of nutmeg to the dry ingredients, and one tsp of vanilla to the wet ingredients. I actually forgot to add the egg and they still turned out really well! Don't over-mix the wet and dry together!

Awesome and Easy Creamy Corn Casserole

Reviewed: Nov. 21, 2004
Excellent and easy recipe... my husband loved it! Next time I'm going to cut it down to half a can of cream corn so it won't be so moist and add some jalapenos.

Pumpkin Chocolate Chip Muffins

Reviewed: Apr. 7, 2005
Mmmm! These turned out GREAT, I made half with chocolate chips and half without. I didn't have cloves so I threw in 1/4 tsp of pumpkin pie spice. Very interesting recipe. If you don't think pumpkin and chocolate go together, you really need to try this. It will change your mind!

Baked Potato Soup I

Reviewed: Jan. 18, 2006
Excellent format for a recipe! I used 5 cups milk and 2 cups of half and half mixed with evaporated milk. Turned out very good! My husband asked me to start making it twice a month! It's VERY rich, I'll probably go easier on the butter next time!

This is really easy and good! I did everything like the recipe says, except I put the shredded meat back into the crockpot with two bottles of barbecue sauce. It's delicious!

Awesome recipe! Overcooked the sauce a little bit so it was a tad bit gummy. Neat taste, don't eat it if you don't like SWEET STUFF.
