Baked Salmon Fillets Dijon

I bought a big salmon fillet on a whim and needed a recipe for it. I decided on this one because I had all of the ingredients on hand. This was DELICIOUS. My 7 year old daughter loved it! I'll be making this again!

Baked Potato Soup I

Excellent format for a recipe! I used 5 cups milk and 2 cups of half and half mixed with evaporated milk. Turned out very good! My husband asked me to start making it twice a month! It's VERY rich, I'll probably go easier on the butter next time!

Pumpkin Chocolate Chip Muffins

Mmmm! These turned out GREAT, I made half with chocolate chips and half without. I didn't have cloves so I threw in 1/4 tsp of pumpkin pie spice. Very interesting recipe. If you don't think pumpkin and chocolate go together, you really need to try this. It will change your mind!

Awesome recipe! Overcooked the sauce a little bit so it was a tad bit gummy. Neat taste, don't eat it if you don't like SWEET STUFF.

Cranberry Sauce Extraordinaire

Pretty good! It only took 22 minutes of simmering before it was finished. For the 1 cup of dried fruit, I used mariani dried fruit (chopped up) and omitted the prunes. The pecans add a great touch, it really wouldn't hurt to add a little more pecans if you're a fan.

Caramel Shortbread Squares

I made the mistake of following the version of this recipe that is in the cookbook. BIG mistake, ruined a whole pan of potential caramel. You only need to boil the caramel for 3 or 4 minutes and stir CONTSTANTLY. Then take it off of the burner and stir it for about two more minutes. This turned out WONDERFULLY. My husband gives it a 10, and he never gives anything a 10.

For the love of GOD, don't melt the butter... make sure it's softened, NOT MELTED... mine didn't bake up right but I'm still giving it five stars because the taste is so wonderful, even if you ruin the batter! Will make again, and next time I'll follow the instructions!

This cake is too bitter for me. Next time I think I'll try crushed butterfinger instead of heath bars. My husband gives it three stars, he says it's good but nothing special.. my three year old son screamed I LOVE IT over and over...

Vegetable Pizza II

This really is the best way to make vegetable pizza. I used an extra half package of cream cheese though, because it was too tangy. I used a food processor to shred up cauliflower, broccoli and carrots. It ground them into a kind of crunchy power-it was neat. Then I sprinkled the top with shredded cheddar cheese. Good stuff!

This cake turned out so well that it was GONE in three days! I'm going to make it a lot now! I sprinkled the leftover peanut butter chips on top of the icing... I recommend this recipe to anyone!
