Like another member, I was kind of freaked out on the amount of oil. I reduced it to 1/3 cup and it was still wonderful. It's nice to have this in my cookbook for when my vegetarian friends come to eat. I used the Progresso white kidney beans-yum! Thanks for this great recipe!

Cream of Broccoli Soup IV

I really wanted to like this soup, but it was too thin. I am used to a thicker cream of broccoli in restaraunts and was hoping this was something close. There was not much flavor either, even after I added double the margarine/butter. I did learn that making this soup was not that hard, so not a complete loss.

Mafioso Chocolate Cake

I just needed an icing recipe using Dutch Cocoa and I used this icing recipe. The flavor of the icing was delish, but it was a bit runny-when dealt lemons, make lemonade! I just drizzled it on my bundt cake and it was fine. Good flavor.

Moussaka

Lots of ingredients, but don't be discouraged. White sauce and other flavors tasted like yia yia's. Forgot to add the egg, so meat didn't cake up, but overall taste just like it should. Don't skimp on the eggplant! (Made it without the wine.)

Cranberry Nut Bread I

I was looking for a recipe to put fresh whole cranberries in and this one did the trick! I thought the orange flavor in the bread added to the overall flavor. It is not as sweet as a banana bread or other breakfast breads, good with coffee.

Easy Ground Beef Stroganoff

Thank you for this recipe. It makes enough for my husband and I to have two meal's worth and then I can also take some for lunch! I tried it both with a spoonful of sour cream as a garnish and without. Both are great!

Poppy Seed Bundt Cake I

I received rave reviews about this cake at work. This was my first "from scratch" cake and it came out perfect! The title is deceiving though...look at the ingredients. While there are certainly poppy seeds, there's much more flavor. The only catch to this cake is that when using a multi-patterned cake pan, it is hard to see the design for the dark cinnamon crust. I am making a version without the crust now to see if it works. (I will miss the crust though, it was sooo good.)

Cherry Cream Cheese Pie

My husband loved this recipie to my surprise. He and I are fans of NY style cheesecake and I didn't think he would go for this. He devoured it. I made the graham crust extra thick with the Nabisco graham crumb recipe on the box and made the pie in a spring form pan.

Baked Ziti I

This was a nice alternative to the "normal" way to make Ziti. It was easy and you can use reduced fat sour cream without altering the taste! This was great warmed up for lunch the next few days and it freezed well. This will be the way I make it from now on.

Coconut Macaroons III

My husband, the coconut freak, loved these. I doubled the recipe, halved the size of the cookie to about 1" globs and cooked for just as long. It made about 4 dozen. The end result is a macaroon minus the cakey portion that some turn out to have. We enjoyed the sweet flavor.

Thumbprint Cookies I

Very nice textured cookie, but make sure your jam is a type that has zip...or could be a little bland. (I tried with peach and blackberry, the blackberry was better.) Nice looking cookie on a cookie tray during Christmas!

Apple Scones

I was hoping for the type of scone you find in coffee shops. The only reason why this fell short is because it has more of a cakey consistency. The apple was mild and it was not too sweet. Good warm with a little butter spread on top. Not hard to make!

This is a little chunkier than I expected it would turn out to be, but over all very good! I served it to a bunch at my party with raw vegetables and at least two asked for the recipe. Many liked it but couldn't identify what was in it, which made it fun!

Apple Loaf

I should have just stuck to the original recipe! I tried a little of the reviewer's hints and came out with a thicker not-so-sweet bread. One good thing, I doubled the apples and the bread held together just fine.

Fresh Peach Cobbler II

I thought it was delicious and not too hard or long to make. I already had all the ingredients at the house which made it easier too! One note about the directions...in step 2, after mixing the sugar, lemon, etc. Spread on top of peaches and put all in the oven while making the shortcake.

Squash and Tomatoes a la Old Bay®

Great way to use those summer veggies! Actually, I forgot to do the cheese part and it was really good. Nice to have Old Bay on something other than seafood. Very flavorful. (Marylanders-add more Old Bay...your tollerence is high!)
