Chicken Florentine Casserole

This was awesome! and I'm not a big fan of recipes with cream soup. I just did a few things differently so I'm really not altering the recipe just the method. I placed fresh spinach in a 9x12 pan, arranged chicken tenders on top, mixed the sauce together as directed and poured over the chicken and spinach. Last 5 mins topped with Mexican cheese because that's what I had on hand. Didn't add bacon or mushrooms but most likely would make a great addition. Easy method - just layer it in a casserole and bake at 400 for about 40/45 mins.

Simple Whole Roasted Chicken

The main reason I wanted to try this recipe is because I hate when the chicken breast dries out, however, I did want the skin of the breast to brown so I turned it over half way through cooking. I think the sugar helped it brown faster too. I wasn't crazy about the seasoning selection so I didn't increase any of it - the breast did not dry out at all. It turned out like a rotisserie chicken because it was well browned on all sides so that's why I gave it 4 stars.

Tasty Buns

Awesome! I am a very poor baker - and these rolls turned out perfect. I only needed 6 rolls so I cut the recipe in half and it turned out really good, plus it was so easy! Next time, I'll try adding some garlic for garlic rolls.

Tater Crisp Chicken

Turned out really good. I sprinkled legs with salt and pepper and italian seasoning after rolling them in garlic potato flakes. Turned the legs the last 5 mins and broiled to crisp up the underside. Will try olive oil next time instead of butter to reduce fat.

Beef Noodle Soup

Very good, but after browning, I simmered the beef, onion, celery in broth for one hour to tenderize the beef, then added the carrots for 30 mins then the noodles for 10 minutes - otherwise the carrots and noodles would have turned to mush.

Oregano Chicken

Very easy - I poured the butter/oregano mixture over chicken leg quarters and baked for about 45 mins - transferred to another pan and crisped up for about 15 mins.

Easy Baked Tilapia

I grilled mine on the George Foreman grill. I used the same ingredients but since it wasn't going in the oven I melted butter and olive oil on a plate, rubbed the filets in it, sprinkled it with lemon juice - and then used all the other seasonings - turned out great! Served with steamed green beans and garlic bread.

Grilled Pork Tenderloin

I grilled mine on a gas grill - browned it for 5 mins on each side and then turned off the middle burner, brushed it with about 1/4 cup of bbq sauce and then cooked with indirect heat for 20 mins. Perfect!

Slumgullion

I gave it 4 stars because I had to tweak a little. Added beef base, worcestershire, parmesan cheese and sugar to cut the acidity taste of the tomatoes. Some basil for seasoning. Only used 1-1/2 c of tomato sauce and 8 oz of macaroni. Very kid friendly.

Pork Chop and Rice Casserole

I've made a similar dish before and didn't like it but thought I'd try again. I'm giving it 4 stars because the pork turned out tender but the rice turned into mush in the gravy. I also seasoned with rosemary because I thought it needed more spices. Next time I'll just brown it and put it in the slow cooker with chicken broth.

Slow Cooker Lemon Garlic Chicken II

This is an easy way to cook chicken if you don't have time. I use this recipe if I defrost chicken and then plans change and I don't have time to cook. I just put it in the slow cooker and then keep in the frig for sandwiches or freeze for making soup or another recipe later.

Black Pepper Beef and Cabbage Stir Fry

I thought this was very good. I doubled the meat seasoned with a little onion powder, salt and pepper and added cooked rice and garlic in with the meat mixture. I don't like peppers so left that out and it was still tasty. Next time I'm going to substitute elbow mac instead of rice. Great easy meal to make during the week and bring leftovers to work for lunch.

Slow Cooker Oatmeal

This oatmeal reminded me of the oatmeal my Grandmother used to make after I scraped it off the bottom and sides of the pot. Cooking it over night was way too long. The oatmeal clumped and stuck to the sides and bottom, so the next time I prepared it, I sprayed the pot with PAM, cooked it in a slow cooker for 1 hr. 15 mins on high. Stirring every 20 minutes. Added 1 cup of 2% milk instead of half and half, 1 tsp. sugar and 1/4 tsp. salt and cooked on low for another 20 minutes. Let cool. Divided it into individual bowls, put it in the frig and heated it in the microwave the next four mornings. Excellent oatmeal!
