Quinoa and Black Beans

This is a great meal in itself and was my first time making quinoa. I doubled the quinoa and soaked it in water for about 10-15 min because i prefer the quinoa soft. Sauteed crushed garlic cloves in the oil until they turned brown and discarded them before i added the onions. Added a half a cup of diced mushrooms and a whole red bell pepper diced to the onions and sauteed for another 5-7 min and added a little salt. Added the quinoa and about 3 and half cups of chicken stock along with the cumin and some paprika. Brought it to a boil and simmered for 20 min. I let it cool before I added a can of corn, can of black beans, squirt of lemon and some fresh cilantro.

Ultimate Frozen Strawberry Margarita

by far one of the best margaritas. i used fresh halved strawberries with sugar which i let stand for about an hour and then froze them. i didn't have triple sec but had peach schnapps i also had lemonade concentrate instead of the limeade. it still tasted awesome....thanks for the recipe, this will be my go to margarita recipe :)

Chicken Marsala

didn't have any mushrooms and used a red wine that i already had instead of marsala. added chicken stock instead of sherry and added cream for a creamy and savory sauce. ate with a side of noodles. will definitely make again.

Spinach Stuffed Chicken Breasts

This is a very light and tasty dinner, but a bit time consuming. Be sure to make extra to plan for another meal. Very versatile..definitely goes with a meal sz salad or even with potatoes or pasta. Cooked the bacon in micro for 3 min. i subsituted the mayo for plain yogurt. Sauted spinach, onions, garlic and mushroom in evoo with w/ a splash of white wine and lemon juice right at the end. Add some sea salt and pepper to taste and cool. Added feta cheese and yogurt to spinach misture and stuffed and rolled chicken breasts Seared the outside of the rolled chicken breast then covered in foil and baked at 350 for 30 min and broiled for the last 10 min. Sliced chicken and topped it on a bed of romaine lettuce.

Super Short Ribs

My mom used to make this all the time. Browned it and cooked in crockpot for 4 hrs. Used chicken stock bc that's all i had, used sweet chilli sauce and ommitted the honey and worcesthire sauce, doubled the pineapple and added a couple tbsp on apple cider vinegar...Delicious =)

Rice Balls a la Tim

Delicious. Made a few changes. i doubled the recipe. Added a tsp of chicken boullian to the rice water to give it some flavor. Microwaved a box of frzn spinach and drained. Added some onion, italian seasoing, and lemon pepper/salt seasoning to the ground beef. Drained the excess oil and added the spinach. I didn't have any mozzarella cheese...used what I had...some parmesan, romano, and queso fresco. Made 14, 3"-4" sz balls. From another reviewer, I dusted flour on the rice ball before dipping into my eggwash. Baked for 25 min and broiled for about 7 min, came out perfect. Since I flavored the rice, I enjoyed it without the sauce, but it was still delicous with it. Husband loved it, so did my 7 yr old who hates eating veggies. Will definately make again.

Tender Italian Baked Chicken

This was my best baked chicken ever. I did change a few things. I added bay seasoning to the chicken. I didn't have any mayo so I used EVOO instead. Used Romano cheese bc that's all I had. Mixed panko crumbs with seasoned bread crumbs. It was a hit!! Thanks for the recipe!!
