"OH SO EASY - LAST MINUTE" dessert. My husband wanted something that was sweet 'n "wet" in his terms. This one HIT his sweet spot!

Cranberry Pistachio Biscotti

I followed everything exactly, except I exchanged the almond extract for rum extract! NICE! I also threw in garnished oranges, EVEN better! The batter came out a bit too soupy. So I added 1/4 more cup of flour to give it some body. Heads up, WET your hands prior to handling the dough and take off your ring! It is GOOPY and will spread out about 2 to 4 inches more at the end. Nevertheless, it was WORTH IT! My husband mocked at me and didn't think pistachios goes well with dried fruit - WRONG! He turned out to be a BISCOTTI MONSTER! :-)

Cranberry Orange Loaf

I freaked out! I ate the oranges after I zested it and didn't realized I was supposed to save the orange to juice it. So, in a frantic, I added my "fanta" orange soda and threw in extra orange zest I had. Also, I didn't have pecans. I threw in crushed slivered almonds. YAAY me. This is SO nice! I had 3 lbs of fresh cranberries and didn't know what to do with it. This recipe is a "MARRIAGE SAVER!" I LOVE the crusty top feel to this muffin version. I needed something that was quick to pack and drive away. It made one loaf of bread and 6 muffins. :-) THUMBS UP - the frantic baker.

Sweet Irish Bread

Friends and families alike have raved about this bread. I've tweaked a few things around to use what I had at hand. Here goes: fat free sour cream instead of the real one. Threw in other dried fruits I had stock instead of raisins. It worked out well. It is a tad bit dry, but oh so perfect to top it with jams, honey butter, and what have you. This is a keeper and inked in my cabinet! Enjoy!

Greek Lemon Cake

Perfect "disappear in your mouth" cake. Fresh lemons were not overbearing. I didn't have fresh lemons. So, I used lemon juice and 1 Tbsp of lemon extract. I topped it off with dried poppy seed. Oh so nice! I do admit its a tad bit labor intensive but worth it.
