Greek Penne and Chicken

My husband found this recipe and we made it this evening. It's pretty good. We followed a few of the suggestions - we used a can of diced tomatoes plus we still added a chopped tomato. We also at the last minute added a can of tomato sauce - we needed more sauce. We also used a Rotini pasta and only used 12 ounces instead of 16 ounces. It came out pretty good. We may try some kalamata olives next time along with artichokes that are marinated instead of in water. All in all though - very good - I used all of the lemon it called for and didn't feel it was too much - I thought it actually gave it nice light flavor for summer. It's a keeper. Quick, easy and good!

Grilled Tuna

I have made this once before - the first time we had tuna steaks. Very simple, yet very flavorful. I will be making this again tomorrow. We love it. I just throw the steaks on our gas grill and they come out perfect. I also add a little garlic powder when I am seasoning with salt and pepper. Very yummy. There are never any leftovers.

Coconut Cake III

I made this coconut cake for my Bunco group last night. The ladies loved it! I made it as the recipe says, however, I substituted pecans for the walnuts. I love pecans. Even the ladies who said they typically didn't care for sweets - loved it! Didn't have alot left over. I will definitely make this again. Oh, and the toasted coconut on top - YUMMY!

Turkey Pot Pie I

I have made this a couple of times now and it turns out great every time. I put a can of cream of chicken soup in at the end. It has not turned out too dry yet! Yummy!

Ronaldo's Beef Carnitas

I have made this several times. I've used beef and pork. Both are great! I use my slow cooker and the meat is so tender and shreds so easily. I also double all ingredients except for the chili powder. That I only use 1-1/2 times the amount. I am not a fan of alot of chili powder. This is always a hit. Everyone is always impressed and they have no idea how easy it is to make. :)

Broiled Tilapia Parmesan

First let me say that we "loved" the sauce. Very yummy. I have never been a fan of broiled meat or fish but we went ahead and tried this receipe. The sauce did not brown - it just ran off and down the sides of the fish and all wound up on the pan. Also, the texture of the fish made us unsure as to whether it was fully cooked or not - so we ended up throwing it in the microwave to make sure it was cooked through. I will make this again, but I think I would try breading the fish and baking and then broiling when the sauce is placed on last. I'll let you know how it goes.

Lemon Cake

I made this lemon cake tonight - turned out great! I did as others said and used a lemon cake mix along with lemon pudding. It turned out great - and it looked very pretty too! I put it in a 9x13 pan and it turned out fine. I love that the topping is not overly sweet either - I also used fat free cool whip and we thought it tasted fine. I will make this again!

Chicken Jalfrezi

Can I just say - WOW! I love all the different flavors in this recipe. I really like that all the flavor comes from the spices and not fat! It was even better left over the second night! I find that cilantro loses its great flavor when it is cooked so I just used some fresh chopped cilantro as a garnish. I also used chix breast cut into strips and it was great. I wish I could give this dish 10 stars!

Apple Crumb Pie

I have had to make 2 of these pies within the last 5 days! My 12 year old niece keeps gobbling them up. My honey loves it too! I didn't add raisins and instead of walnuts I added pecans. The pie came out great! I'm not an experienced pie maker and not a great baker - but this pie was very simple!

Marbled Pumpkin Cheesecake

I made this recipe as is.....except I put 1tsp cinnamon and about 1/2 tsp nutmeg. It was FANTASTIC! I will definitely make this again. Loved the pecans in the ginger crust.

HERB-OX® Bouillon Pork Chops with Burgundy Mushroom Sauce

The red wine was fantastic with the dijon mustard and mushrooms. I added 1 tsp corn starch to the sauce when it was boiling the last 5 min. It was still a little too soupy for us. Also next time, I would only put dijon mustard on 1 side of the pork chops - it was just a little too strong. It still had great flavor though! I will definitely make this again.

Curried Honey Mustard Chicken

I was looking for something new and different to throw on the grill tonight......this was it! I had to use yellow prepared mustard instead of Dijon. I basted the chicken once on each side while it was grilling. It was fantastic!

Curried Chicken Salad

I have been making this for years now! We LOVE this. I have never used the bacon though. I usually buy a rotisserie chicken and use that as well. I always use 2 tsp curry powder too! This is big favorite around our house! Thanks so much for posting.
