I'm a California boy who has traveled around and I love trying new things and mixing them together. I think tradition in cooking with a little bit of innovation goes a long way.
My favorite things to cook
I love bbqing, smoking, and grilling anything I can. I even bbqed my wifes birthday cake once (the oven was broken). If I can't afford to buy it a restaurant, I cook it at home.
My favorite family cooking traditions
No crazy traditions, just good ol American turkeys and hams. The only tradition is that everyone has to contribute to big holiday meals.
My cooking triumphs
I felt pretty cool when I figured out how to make XinJiang lamb back in the states. I got addicted to the Uighur dish in China, and I love cooking it here at home.
My cooking tragedies
I once cooked 2 racks of bbq ribs in an unfamiliar bbq and didn't check on them. They were literally incinerated. Only the bones were left. A true tragedy.

Daddy Mack's Oysters
I've tried this recipe 4 times now and its freaking awesome and I've only got the best of the best compliments when I make it. I see no reason to hot shuck the oysters. I think shucking them cold is much easier, and it allows you to prepare ahead of time. It tastes just as good to cook them open face with the butter, just be careful of flame-ups and turn the grill down a bit once you place the oysters and butter down.
