Rooted in the South, but transplanted in Eastern Virginia. 27 year military man who has traveled widely and developed a diverse palate. Learned to cook early on as a kid in my mom's kitchen. She made everything from scratch. There is nothing like good friends, great food and engaging conversation.
My favorite things to cook
Spicy shrimp, sausage and stone ground grits. Chicken and seafood gumbo (okra is a must). Spanish paella (must have real saffron). White bean chicken chili (friends have threatened to slap my momma over this dish)
My favorite family cooking traditions
I'm from the south and my wife is from northern Maryland. We have very different kitchen traditions. Though we cooked together quite a bit when we were younger, after 39 years we just get on each others nerves. Our tastes in food and cooking styles are just too different.
My cooking triumphs
My first perfect gumbo rue made with butter and flour turned out just the right color of redish tan. That pot of gumbo was THE BOMB!!! Every previous attempt had ended in disaster.
My cooking tragedies
My many attempts to perfect a gumbo rue. Other than that, I've done pretty well. Military training taught me to regimented and to pay attention to detail. These traits come in handy in the kitchen.
