Chicken in Sweet Pepper Sauce

Loved it. I thought it was not ever going to cook on medium, but it did, and the wait was worth it. I didn't have Chinese black vinegar on hand, so I substituted white vinegar one-for-one.

Cheesy Baked Eggplant

I would make this again, but I think I need to slice my eggplant thinner. The skin was a little more noticeable than I would like as far as texture goes.

Spinach Lentil Soup

I would definitely make this again. I wanted to use this as a main dish, so I used a whole Jennie-O turkey kielbasa, which I think was closer to 14 ounces. Yummy!

Cream of Cauliflower Soup II

This was a great hide-the-veggie recipe! We have trouble finding ways to use cauliflower, and this soup had a very subtle cauliflower flavor, so it was just what we were looking for.

Light Oat Bread

A very fluffy, soft bread with a crunchy crust. It baked up nicely in our bread machine on the light setting recommended in the recipe. Because it is a soft bread, it is very delicious for eating by itself; however, it makes it difficult to use for sandwiches because you have to cut it thick to avoid tearing the slice.

Apple Yogurt Pancakes

This recipe makes a dense, filling pancake. It is very delicious and so far also seems to freeze well. I grated my apple rather than dicing it to save time.

Roquefort Pear Salad

Everything the other reviews said about all of the flavors complementing each other was entirely true! This was a delicious salad. I had never made candied pecans before, but it was easy to do as stated in the instructions. We have continued to use the dressing on other salads and also enjoy it with those. I will make this often in the future.

Buttermilk Pancakes II

Wow -- I have never made such fluffy pancakes before! I was trying to use up leftover buttermilk, but these were so good I would buy it just for this recipe! These were easy to cook, but I reduced my heat to medium because my stove seemed to be burning the butter, which I was using to cook the pancakes.

Best Cream Of Broccoli Soup

Wonderful flavor! As the title suggests, this is the best cream of broccoli I've had so far. I used the stalks in addition to the florets -- just peel them first so they're not too bitter or tough.

Loved it! As the author states, it does taste great the next day (and beyond), so it made great leftovers. I used milk instead of cream to cut some of the calories, and it still tasted great.

Baked Rigatoni with Italian Sausage and Fennel

A winner for me. It makes 8 large servings -- we invited some friends over to help us eat it all! We loved it, and our friends loved it too. It took me a while to prepare it, but it was worth it.

Whole Wheat Blueberry Beet Muffins

These muffins are great! They did an excellent job of "hiding the veggies"... I did not notice the beet at all! They were popular with friends. The only modification I made was to use a little less than half of the sugar called for in the recipe.
