Lemon Butter Cookies

Reviewed: Mar. 17, 2004
All-in-all the recipe was pretty good. I would probably swap the lemon juice for the extract next time around. Also, the thickness of the cookie as stated in the recipe is not correct. It says the dough should be rolled to 1/4" inch. Using this thickness the yield is approximately half of the 2 1/2 dozen stated. Not only is the yield cut in half but the cooking time hs to be almost doubled. I suggest rolling these to about 1/8" thickness.

Exquisite Pizza Sauce

Very good but not the best I have had. I try and reserve the 5 star rating for recipes that really make me fall in love like no other.

Classic Baked Mostaccioli

Reviewed: Apr. 18, 2003
I didn't have any romano so I subbed dried parm. It tasted great. My only complaint is that it wasn't saucy enough. I think that is due in part to the dried parm. I will try it again with romano instead.

Chicken Noodle Casserole I

Reviewed: Apr. 18, 2003
This recipe was OK. I felt it was somewhat tasty but that the cracker topping was too salty and buttery. I may make this recipe again but, I probably won't.

Lime Chicken Soft Tacos

Reviewed: Mar. 14, 2003
Quite good. I did however double the sugar and lime. Next time I will add a couple more green onions and possibly some red pepper to spice it up a bit. I will make this again.

Jay's Signature Pizza Crust

Reviewed: Mar. 12, 2003
Until I find a better one, this is the one I will be using. I made the dough in my bread machine and it came out way to wet. It took about another cup of flour and lots of kneading to make it useable. The extra kneading resulted in a tougher crust than I really like. Next time, extra olive oil and flour. Keeper.

BBQ Chicken Pizza I

Reviewed: Mar. 12, 2003
Delicious but, has too much salt. Like you may notice in my other reviews, salt is a big issue with me. I have been avoiding salt in my food ever since my grandfather died in '82 of heart disease. Many people add salt before they even taste their food. Go a month without added salt. When you do add it, you will notice it tremendously. Don't get me wrong. Salt is good. Just don't overdo it like 95% of people do. I'm not sure where that came from. Anyway, the recipe deserves to be tried again.

Herbed Chicken Pasta

Reviewed: Mar. 12, 2003
Very good. I would recomment to use Roma tomatoes in lieu of a larger less italian flavored tomato. Definately a keeper.

Alice Chicken

Reviewed: Mar. 12, 2003
Very good. The only downfall was the dressing I used. It was Wishbone honey mustard. Very salty and very smokey. I will make my own honey mustard dressing and try this one again.

Chicken Marsala

Reviewed: Mar. 12, 2003
Not the very best Marsala but very good. My marsala wine was not very sweet so I added about a tsp or two of sugar to sweeten it up. Very yummy.

Chicken Tortilla Soup II

Reviewed: Mar. 7, 2003
The flavor is pretty good. The appearance is mushy garbage. It has so much oil it collects at the top in a thick layer. It hardly looks edible, but it is. I will however attempt this recipe again with a few changes. 1) Fry the tortilla strips drain and set aside. 2) Saute onions and cilantro in 2-3T (not 6T) of oil. Drain and return to pot. Do whatever you can to reduce the oil. 3) Follow rest of recipe. 4) Garnish with fried tortilla strips and maybe a mexican cheese such as Queso Quesadilla.

Banana Pancakes I

Reviewed: Mar. 6, 2003
IF you could say there was such a thing as an intense banana flavor, this is it. They are quite good and very banana-ee. :) You do not need much syrup because they are very sweet. I will probably make these a couple times a year.

Burrito Pie

Reviewed: Feb. 18, 2003
It was good, but not as good as people are making it out to be. I will, however, probably make this one again. It's not stellar but good for a repeat. Oh, even if you cut this in half, with a family of 4 you will have leftovers. It makes a ton.

Allie's Delicious Macaroni and Cheese

Reviewed: Feb. 17, 2003
It doesn't seem like you could screw up mac and cheese, but somehow I did. Granted this is my first time making mac with real cheese; I normally make Velveeta style. This came out very grainy. The flavor was pretty good, but I just couldn't get over the texture. Is it supposed to be like this?? The description does say creamy. Regardless, I am still searching the the ultimate mac and cheese.

Absolutely Ultimate Potato Soup

Reviewed: Feb. 17, 2003
This is the best potato soup I have ever put into my mouth. The only enhancement I made was to use 6 inch sourdough rolls as bread bowls. There is just something awesome about eating the bowl, besides the flavor of course.

Absolute Mexican Cornbread

Reviewed: Feb. 17, 2003
First off, I love butter. This recipe has way too much butter in it to be good. I cut the butter in half and still thought it was too oily. You could probably cut the butter completely or by 75% and get a much more solid and tasty cornbread. I won't be making this one again.

Cajun Chicken Pasta

Reviewed: Feb. 17, 2003
This was very very good. I did however change a few things. I doubled everything except the chicken and bell peppers. For the pasta, I used 1 pound versus 4 ounces. This made the sauce very thin. I then added 1 tablespoon cornstarch mixed with water. It thickened up like a dream. Next time I will add a bit of cayenne to perk it up. We also like spicy food. This yielded 4-6 servings instead of 2. We like leftovers. :)

Gerry's Chicken Enchiladas

These were very good except they were very salty. I am a bit sensitive to salt, so take it with a grain. I will use all low sodium ingredients next go around.
