Lemon-Thyme Cornish Hens

First time cooking Cornish Hens? Do it Deborah's way. This recipe was not the first one I'd followed to prepare cornish hens, so I went in already knowing I love the meat. Skip the others, learn this, then try the others. This was unintimidating, it was quick, and was prepared using ingredients typically on hand. If you are a cook thinking, "Hm. I've seen those at the grocer," and you've landed on these Lemon Thyme Cornish Hens, then you can cook 'em. Delicious - and you can play around (I threw a few raisins in the cavity to sweeten the pot, and because I love raisins when they've roasted in ANYthing.) or play it straight. The kitchen warms up, the house smells terrific. I served with diced, slow-simmered (bulk produce) yams in tomato base broth right along with the oven clock. I've served with mashed potatoes and mixed veggies.

Stir-Fried Chicken with Tofu and Mixed Vegetables

Well this site is very kind: it won't let me give this recipe "no star." I have never rated a recipe so low. With the familiar ingredients, easy technique, and my own experience, I thought I couldn't go wrong, despite the not-so-hot reviews. One reviewer questioned the addition of corn starch so early in the cooking: good question. That seems to be what went wrong. The flavor wasn't TOO bad, but all in all, this was a failure. I have used all of these ingredients in the past, mostly together or in similar dishes, but in this dish, it all went terribly wrong. Thank goodness for rice and a salad on the side.

Salty Chihuahua

I used to say "Tequila'll kill ya" and then someone gave me a holiday gift of a bottle of tequila. What to do? 2 years later, I finally pulled the bottle off the shelf yesterday after reading this recipe and its reviews. We've been experiencing record-hot temps and humidity for days and days this summer; I needed a quick fix. So easy!! There is no more-refreshing drink out there that can be so easy to make - except maybe a tall glass of water, but that's no fun. Especially no fun to say! Thanks for the recipe.

Succulent Ribeye and Peppers

Delicious! I followed the recipe strictly as I do with any first-try, and it's a winner. Those who cry "dry" must have either cooked this on too high heat or had a bad cut of meat: the steak was incredibly tender and juicy. Very easy, too - while it simmered (I let it simmer 1 hour), I was able to get other things done and clean up the kitchen too!

Curried Carrot Soup

I returned home from work hungry and in need of a dinner made from scratch. But what to do in a snap, to curb my grumbling stomach? I headed for the soups category, first on Cooking Light.com, then on Epicurious.com, finally on AllRecipes.com. Believe me, my stomach was grumpy, and I had to act fast. This soup not only fit the bill regarding speed and ease, it completely surprised me with its subtle strength. It is so delicious, but not over-flavored. It's got distinct spice, but it's not competing. The strength of this soup is its elegant subtlety: it's light, fresh, and absolutely perfect. Give it a try - only stone soup could be easier.

Holiday Cheese Spread

So many distinct flavors, and they each stand out individually even when blended completely! This is a delicious spread, and perfect for celery boats, as another reviewer noted. My family was surprised by the spicy kick but heartily came back for more and more! We had it on crackers and on celery, and gobbled up a whole bowl (I made half the recipe and it made a large bowlful). I recommend this spread for those who like their hors d'oeuvres rather spicy.

Parsley Potatoes

Yummy is right! This side tastes fresh and healthy; the combination of the fresh parsley and potato made the potatoes taste like I dug 'em up just before simmering. I served this with a rib-eye steak as suggested: what a dynamic duo!

Bean and Tomato Stew with Sage

Can't get much easier! This stew was simple to make, and needed very little attention while simmering, granting me the opportunity to finish cleaning up the kitchen and set the table. Very satisfying, while compatible with low-cal dieting. Just short of 5 stars because the herbs are borderline over-powering. Tasty, but a bit too much competition with the simplicity of the beans and tomatoes. Still a keeper - this is a great warmer-upper!

Roasted Acorn Squash

While the flavor of this dish is terrific, the texture is simply too dry. I stood at my refrigerator, searching for something, "anything" that I could add to make it more palatable. I finally added about 1/2 cup of pineapple juice and cooked it in that for an additional 5 minutes. It did the trick! I will make it again, but will also add the juice.

Montreal Peppered Steak
