I have never lover of minestrone basically because I'm not a fan of tomato based soups but there was something about this recipe that caught my eye.
My husband is a soup fanatic and I try to find good recipes that will last for a few meals because I get home too late from work to start fussing in the kitchen.
I have to say that this is a fantastic recipe for something I'm not even crazy about!
I pretty much followed it as written but I added a can of diced tomatoes and baked some Italian sausage in which I cut in to tiny pieces and threw into the pot. Also, I only used two zucchinis because they were pretty big ones and omitted the wine simply because I really dislike it. As usual, I tasted a bit here and there as it cooked but I just had my first bowl and could not believe how incredibly scrumptious this is.
It's the very first minestrone that I've loved. I can't recommend it highly enough. Jamie, you're a genius. Thank you sooooo much!!!
