Spanish Flan

I never liked flan as a child... it always had this taste (kind of like this one turned out!). But, as an adult, I recently tried one that was so delicious... I wanted to give it a chance! I took the advice of others & added a couple drops of lemon juice to the sugar. I swirled it & cooked over low heat it was a beautiful light brown color. I had the dish heating in the oven so it was almost hot. Used blender... I did the water bath. After 1 hr I took it out. I checked it & it was still very watery... so in it went another 45 mins. Again after taking it out it was still watery in the middle. So I didin't use the water bath this time baked another 23 mins. After letting it cool I inverted it all this lovely looking caramel came oozing out... then I tried it. UGGH! the caramel was so unappealing! We all cut off the caramel top & the rest was okay... My hubby & MIL liked it (but then they always liked flan). Now, to be fair it maybe the other suggestions I followed... so I will try this again following the recipe 100%.

Corned Beef and Cabbage I

I had always been wanting to try something like this. I made this for St. Patty's Day. I took the advice of others & added beer (mickey's). And I removed the corned beef when I added the cabbage for the last 15mins. (But, that was more my hubby was hungry & wanted to eat in 15mins not 15 mins for the cabbage & 15 for the beef to rest!) This was soooo YUMMY! I couldn't believe I made this! The entire family ate this without complaint!

Juicy Roasted Chicken

I never know what to do with a whole bird... I have tried different recipes here & there including making the store bought season packet/bag (100 times). My hubby never liked any of them. This one was a winner by all! Even my kids... and my MIL who hates everything... was QUIET! Mine was almost 6 Lbs so I cooked it 2hrs & used real butter. But, didn't change anything else. SO YUMMY, sooo juicy! Hubby even said "This was the best BIRD ever!" So thank you!

Stuffed Cabbage

I have never made stuffed cabbage & was very excited to finally try it! After reading the comments, I did add onion & garlic to the meat mixture along with a healthy amount of adobo. The preboil left the inner leaves still tuff. And since they were the smallest (on top) after 1hr 15mins they still were underdone. I lined the bottom of the pot with leaves since you mentioned the bottom ones possibly burning. I also added a couple chopped up tomatoes. Cooked on the stovetop, after 40mins I covered the pot leaving a small vent & cooked another 35mins. Everyone loved it! Hubby asked for it every other week! I am going to try it baked & maybe more juice than water. Thought I'd add... my son (who is 2) came back to the kitchen 5 times in 1hr to eat another serving of this!

Classic Waffles

First time trying to make waffles on my new maker! I added a little to much salt. I was only making 1/2 the recipe at a time. But these were still great & super easy! My daughter loved them w/ just syrup! I used the blender to mix.

Really Basic Peanut Butter Cookies

OMG! These were so easy & delicious! My hubby, wanted peanut butter cookies... But, I didn't have a mix. I will never buy a mix again... That's for sure! My whole family loved them! Good thing I had a large jar of peanut butter! Thank you!
