Garbanzo Bean Chocolate Cake (Gluten Free!)

I was amazed and my in laws were as well! No one would have guessed it was made from beans. I did add 3 tbsp of butter and some vanilla extract (I never bake without it!). I also stirrred in the rest of the bag of chocolate chips just before I put the batter in the pan (a bag of chocolate chips has 2 cups and I had nothing else to use the chips in planned). The cake was extremely chocolatey and like others described between a brownie and cake in texture. My husband thought it reminded him to the texture of texas sheet cake. I was worried because even after processing the beans and eggs for about 10 minutes total, the batter still seemed grainy, but you couldn't tell in the finished cake. Thanks for a great gluten free dessert I can serve my father in law! Oh, and I served it with cherry topping and whipped cream, but it was just as good plain.

Asian Lettuce Wraps

I made these with ground turkey and didn't use tofu (didn't have it on hand). I also served with a sauce suggested in the reviews of another recipe (1 tsp sesame oil, 2 tbsp soy sauce, 2 tbsp rice wine vinegar, 1 tbsp chile paste). In my opinion the sauce put this recipe over the top! I will definitely be making these on a regular basis. So easy and tasty. Thanks!

Vietnamese Fresh Spring Rolls

These were great! We used to go to a little Vietnamese place and always ordered these. When we moved I was convinced I had to try to make these at home. I could not find Thai basil so I had to leave that out. These were still really good, so if you can't find Thai basil, don't worry! The sauces were spot on! My husband loves the fish sauce and I love the peanut sauce, so this was perfect. Thank you so much for a fantastic recipe, I will be making these again and again!

Molten Chocolate Cakes With Sugar-Coated Raspberries

These were fantastic! I made the batter in advance using Bakers semi sweet chocolate and chilled it. I made 2 cakes the first night and then another 2 a couple of nights later. Made in ramekins, so had to cook a little longer (about 11 minutes) because they were bigger. I think this batch would have made 6, but I only made 4 because my husband kept eating the cold batter! He thought it tasted like frosting. Thanks for a great recipe!

Caesar Salad Supreme

This was fanstastic. I added some grilled chicken and called it a meal. My husband RAVED about this. I really like caesar salad but hate the bottled dressing, so we only have it when we go out. Not anymore! The only thing I did differently was made the dressing in the morning to allow it to meld and then dressed my salad as needed. I think this is enough dressing for about 3 heads of romaine. Next time I am going to try the low fat mayo and add spinach to my salad in order to make it a little healthier. Because I can see us eating this salad weekly!

Pancakes I

Great pancake recipe! Very fluffy. I did use half whole wheat flour and half all purpose. This was my first attempt at using whole wheat flour and it came out great! I will be using this recipe from now on for pancakes. Thanks!

Easy OREO Truffles

These were great! I gave these out for Christmas along with some other candies and these were the star! Very easy to make. I froze the balls, then used two spoons to swirl them in the chocolate. I also used chocolate chips instead of the squares (they were cheaper) and they still tasted great. Thanks for the fantastic recipe!

Slider-Style Mini Burgers

Loved these! I did use less mayo (a little less that 1/4 cup) and still found them amazing. Super easy to make and taste close enough to Krystal burgers (that I cannot get where I live now!) for me. Thanks for a great recipe! UPDATE: This also works great with ground turkey!

Sweet Potato Rolls

Even with my very limited experience with yeast dough, these came out very well! Very light and fluffy. I did use fresh sweet potatoes and I added about 1/4 cup more to the dough. They still did not really taste like sweet potato at all. The dough was very easy to work with, I did add a bit more flour. I will definitely be making these again!

Midwest Loose Meats

We really liked these. I added onion and garlic to the beef as I cooked it and left out the salt (I think the chicken broth was salty enough). I also didnt put on bread and put it in the oven. Instead I served with artisan bread fresh out of the oven and we each put our own mustard and pickles on. When my husband got seconds, he forgot the mustard and pickles. He thought it just wasn't the same without them so he got up to get them. Thanks for a great recipe.

Quick and Easy Pizza Crust

This was awesome! I doubled the recipe and added some seasonings like others recommended. I made one pizza with red sauce, mozz and mushrooms and another with garlic and olive oil, parm and mozz cheeses, basil, and tomato. They were both outstanding! We will definitely be making pizza at home instead of ordering out. Thanks!

Mushroom Rice

This was very good. I used yellow onion instead of green and then sauted the onion, mushroom and garlic. I added the chicken broth then put the mixture into my rice cooker with the rice. This worked great as my rice cooker has a steamer basket that I can steam veggies over the rice in. I made some chicken seasoned with greek seasoning to serve on the side, but it just got mixed into the rice. Thanks for a great recipe

Grandma Johnson's Scones

These were great! I followed the recipe exactly except I split the dough into 3 then added chocolate chips to 1/3, cinnamon and nutmeg to 1/3 and dried cherries to the last 1/3. I then cut each 1/3 of dough into 8 scones, which I think was a good size. My husband loved all of the variations. I think next time I will freeze the butter and grate it in to try to get more of a flaky scone to see which way we like better.

Apricot Muffins

I made these with fresh apricot instead of dried so maybe that was the problem, but I didn't think these had much flavor. No one in my family really liked them at all. Maybe some spices would help but I don't think I will try it again, sorry.

Tasty Lentil Tacos

My family loved these! My husband thought I was crazy at first, so I made them while he was out of town. When I told him they were awesome he was still skeptical so when he came home I told him we were having leftover lentil tacos for dinner. When he took his first bite he laughed and said he was shocked but they were really good! I followed the recipe for the most part except I used garlic and onion powder instead of fresh and did not add the salsa to the lentils. I served these on flour tortillas with spanish rice, reduced fat sour cream, tomatos, salsa and cheddar cheese. Thanks for a great healthy budget friendly recipe! I will be making these a lot!

Extra Easy Hummus

This is great! We love the store bought hummus but it can get very expensive. I had a hard time finding tahini paste in my small town, so I thought I would give this a shot. This will now be made all the time here. I did decrease the cumin and added some lemon juice. Thanks!
