Garbanzo Bean Chocolate Cake (Gluten Free!)
I was amazed and my in laws were as well! No one would have guessed it was made from beans. I did add 3 tbsp of butter and some vanilla extract (I never bake without it!). I also stirrred in the rest of the bag of chocolate chips just before I put the batter in the pan (a bag of chocolate chips has 2 cups and I had nothing else to use the chips in planned). The cake was extremely chocolatey and like others described between a brownie and cake in texture. My husband thought it reminded him to the texture of texas sheet cake. I was worried because even after processing the beans and eggs for about 10 minutes total, the batter still seemed grainy, but you couldn't tell in the finished cake. Thanks for a great gluten free dessert I can serve my father in law! Oh, and I served it with cherry topping and whipped cream, but it was just as good plain.

Asian Lettuce Wraps
I made these with ground turkey and didn't use tofu (didn't have it on hand). I also served with a sauce suggested in the reviews of another recipe (1 tsp sesame oil, 2 tbsp soy sauce, 2 tbsp rice wine vinegar, 1 tbsp chile paste). In my opinion the sauce put this recipe over the top! I will definitely be making these on a regular basis. So easy and tasty. Thanks!

Vietnamese Fresh Spring Rolls
These were great! We used to go to a little Vietnamese place and always ordered these. When we moved I was convinced I had to try to make these at home. I could not find Thai basil so I had to leave that out. These were still really good, so if you can't find Thai basil, don't worry! The sauces were spot on! My husband loves the fish sauce and I love the peanut sauce, so this was perfect. Thank you so much for a fantastic recipe, I will be making these again and again!
