Italian Cream Cake I

Reviewed: Oct. 20, 2009
This was so moist and light. You have to really fold the whites in well or it won't bake evenly. I doubled the icing to frost the sides. I also toasted coconut and candied some walnuts to put on top. Beautiful on a cake pedestal!

Chicken and Dumplings III

Reviewed: Oct. 23, 2008
This was so yummy! I used the leftovers from the spicy rapid roast chicken recipe. I made stock out of the carcass with onion and spices. Used 3 cups of the stock with a can of cream of chicken with herbs and one plain cream of chicken. Put it in the slow cooker with the chicken pieces, frozen veggies and a T. of tapioca. 30 minutes before serving I mixed Bisquick dumplings (on back of the box) and dropped on the top. My whole family gobbled them up!

Slow-Cooker Pepper Steak

Reviewed: Oct. 7, 2008
This was quick and yummy. I didn't even slice the steaks or brown them. Put them right in the cooker on low all day. I added a large can of roasted red and yellow peppers so no chopping up peppers. Doubled the broth and omitted the salt as others suggested. also added a little Cajun spice for some kick. Served with lefover mashed potatoes. The whole family loved it. My Grandma used to make pepper steak for sunday dinners and it reminded me of her kitchen smelling so nice and homey.

Easy and tasty. Used some frozen corn from this summer. Also topped with Tostitos instead of messing with tortillas.Used canned white meat chicken too.

Chicken Spaghetti Casserole I

Reviewed: Oct. 4, 2008
This was good and easy. I used the leftovers to make a soup the next day. I took the baked cheese off the top and added the rest of the casserole to my crock pot. Put in some mixed veggies and 2 cans of chicken broth. Cooked for a couple hours and served with crusty bread.Tasty and didn't taste like leftovers!

Angel Shrimp Pasta

Reviewed: Sep. 28, 2008
This is really good and simple. I added a bit of 1/2 and 1/2 as another reviewer had done.It was a bit thick before that.I cooked the shrimp seperately from the sauce. Put a little olive oil and sauted with garlic salt and some Luzianne Cajun seasoning. I thought this way I could freeze what was left of the sauce for another meal since shrimp doesn't keep too long. I had plenty for 2 adults and 2 kids. My kids gobbled it up. Serve with garlic toast and ceasar salad, yumm!

Good and easy with most ingredients right in the pantry. I used ancho powder instead of chili powder. Also beer as other suggested instead of water.

Mango Salsa

Reviewed: May 30, 2008
I make this a lot in the summer. My only change is to add a garlic clove and I use red onion for a bit more color. Be sure and let it sit for a few hours or even overnight. Delicious with halibut tacos or just with Hint of Lime Tostitos. Also a margarita!

Poppy Seed Pound Cake Muffins

Reviewed: Nov. 11, 2007
My daughter and I tried this one and felt the batter, as others have said, didn't have enough moisture. We added a little buttermilk and gave it a shot. Just not what we expected. Smothered with butter when they came out of the oven to give some more moisture. :)

Super Sausage Gravy

Reviewed: Apr. 3, 2007
This is so easy and flavorful. I used hot sausage for a bit more kick, and added Lawry's Garlic Pepper with the salt. Also added about another 1/2 cup of milk, as it got too thick when it cooked up. Served with refridgerated biscuits. My son had thirds!

Cheese Ring

Reviewed: Dec. 17, 2005
A friend gave me a similar recipe, and it is a favorite. I don't use green onion, just finely chopped yellow onion. Also black pepper instead of cayenne. She puts finely chopped pecans in the with the mix to taste. Put it in a jello mold overnight to get the flavor thru. turn over and put strawberry jam in the middle. Perfect with Riyz or tricuits. Delicious!

These are on of my family favorites and a standby cookie recipe. Roll in red and green sugar for Xmas time. I keep them in a plastic container with a slice of bread to keep them moist. Works like a charm. People ask me for these every year.
